Air Fryer Shrimp Chimichangas
At home Air Fryer Shrimp Chimichangas were a darn near spot on recipe!
I have been super duper craving my favorite restaurant meal of shrimp chimichangas at our favorite Mexican place!
It got my wheels turning to see how close I could come trying to recreate this dish at home.

How to Make Air Fryer Shrimp Chimichangas
Your air fryer is going to get quite the workout with this one.
We will use it to cook the shrimp AND the chimichangas.
The shrimp seasoning is olive oil, chili powder, garlic powder, kosher salt, and cumin.
You could certainly add ground red pepper for some spice.
Then place this pound of shrimp in the air fryer basket for 8 minutes.
It’s perfectly cooked and would be a great snack just like this!
To make the chimichangas, place 1/4 of the shrimp (mine worked out the be exactly 6 in each).
And some salsa in the center of a large burrito size tortilla.
Add a half cup of shredded cheese (I used Monterey Jack) and fold the sides in.
Then fold the front part of the tortilla over the filling.
Next roll it over and BOOM you have a burrito…that once we air fry will be a chimichanga.
Repeat with remaining ingredients until you have four total.
Brush on all sides with a mixture of olive oil mixed with some chili powder.
Place them in the air fryer, seam side down.
And set the air fryer to 390 degrees for 12 to 14 minutes.
It really just depends on how crispy you prefer.
Depending on the size of your air fryer, this may need to be done in two batches.
Now comes the fun part…topping your Air Fryer Shrimp Chimichangas with lots of extra yumminess!
At our house we set out a toppings bar and everyone makes their own.
We had queso, sour cream, guacamole, more salsa, hot sauce, jalapenos, shredded lettuce…
The possibilities are endless!

Air Fryer Shrimp Chimichangas
Air Fryer Shrimp Chimichangas are so flavorful and super easy to make in the air fryer, a guilt free way to enjoy chimichangas!
Ingredients
- 1 pound jumbo shrimp peeled and deveined
- 2 Tbsps olive oil
- 2 tsps chili powder
- 1 tsp garlic powder
- 1 tsp kosher salt
- 1/2 tsp ground cumin
- 4 burrito size tortillas
- 1 cup salsa
- 2 cups shredded cheese of choice (I used Monterey Jack)
- Optional toppings: more salsa, lettuce, sour cream, hot sauce, jalapenos, guacamole
Instructions

Pat the shrimp dry with paper towels and put them in a bowl. Add 1/2 Tbsp of the olive oil, 1 tsp of the chili powder, garlic powder, kosher salt, and cumin. Toss until evenly mixed.

Place the shrimp in the air fryer basket and set the air fryer to 390 degrees for 8 minutes.

In another bowl add the remaining 1 1/2 Tbsps olive and remaining 1 tsp chili powder.

Lay a tortilla flat and add 1/4 of the cooked shrimp (approx 6 pieces of shrimp), 1/4 of the salsa, and 1/4 of the shredded cheese in the center. Fold the sides in, fold the front part of the tortilla over the filling, and roll into a burrito/ chimichanga. Brush all sides with the olive oil chili powder mixture and place in the air fryer basket. Repeat with remaining chimichangas.

Set the air fryer to 390 degrees for 12 to 14 minutes.
Note: Depending on the size of your air fryer you may need to do these in two batches.

Serve with optional toppings such as more salsa, lettuce, sour cream, hot sauce, jalapenos, guacamole if desired.
