
Air Fryer Shrimp Chimichangas are so flavorful and super easy to make in the air fryer, a guilt free way to enjoy chimichangas!
Pat the shrimp dry with paper towels and put them in a bowl. Add 1/2 Tbsp of the olive oil, 1 tsp of the chili powder, garlic powder, kosher salt, and cumin. Toss until evenly mixed.
Place the shrimp in the air fryer basket and set the air fryer to 390 degrees for 8 minutes.
In another bowl add the remaining 1 1/2 Tbsps olive and remaining 1 tsp chili powder.
Lay a tortilla flat and add 1/4 of the cooked shrimp (approx 6 pieces of shrimp), 1/4 of the salsa, and 1/4 of the shredded cheese in the center. Fold the sides in, fold the front part of the tortilla over the filling, and roll into a burrito/ chimichanga. Brush all sides with the olive oil chili powder mixture and place in the air fryer basket. Repeat with remaining chimichangas.
Set the air fryer to 390 degrees for 12 to 14 minutes.
Note: Depending on the size of your air fryer you may need to do these in two batches.
Serve with optional toppings such as more salsa, lettuce, sour cream, hot sauce, jalapenos, guacamole if desired.
