Summer is meant to be enjoyed…lots of time outside, at the pool, and patio sitting around here. That’s why for this week’s meal plan, the theme is 20 minutes or less!
All three weeknight meal ideas and the weekend snack-y snack dinner can all be made in 20 minutes or less. Leaving you more time to go and enjoy all the summer fun 🙂
BONUS RECIPE ALERT…since this upcoming weekend is the Fourth of July, I also included some of my favorite recipes for parties and picnics at the bottom of this post.

Two of these recipes use already cooked, shredded chicken. I suggest using a store bought rotisserie chicken or making my Simple Shredded Chicken for Meal Prep and storing it in the fridge.
These are such a fun dinner, and my kids really like them.
They are more of a snack type dinner, but if you pair them with a nice side salad and possibly some cut up fruit it makes a great complete meal.
These steak bites are so full of flavor, and they are amazing dipped in the quick and easy homemade yum yum sauce.
I suggest serving with a side of rice or cauliflower rice, and to save time use the pouches of rice that you just microwave for 90 seconds.
If you love yum yum sauce, and steak, try these Hibachi Grilled Steak Kabobs for a night that you have a little more time.
This is a salad that has it all…crunch from the pecans, sweet from the cranberries, salty blue cheese or feta, and a light homemade dressing.
Heck, you could make some extras and prep them in containers for easy lunches throughout the week 🙂
My kids will eat most components of this salad, just separately. So their plates will have cut up chicken, a side of dried cranberries, and a side salad with ranch dressing. It’s worth the extra few seconds to not have to make everyone their own special meal, right?
Oh my yumminess…this weekend recipe is awesome!
Crispy tater tots with buffalo chicken bites, cheese, and ranch drizzled over top!
