Superfoods are super good for you (hence the name 😉 ) and pack an extra punch of nutrition. Foods such as eggs, spinach, salmon, berries, sweet potatoes, kale, avocado, and mushrooms (just to name a few) are ingredients I cook with often. So I planned a Superfoods Weekly Meal Plan this week to try and get as much use of these ingredients as possible.
Call me weird, but I like to challenge myself each week to come up with an easy, themed meal plan and I share it with you. Everyone always tells me the worst part of dinner is actually planning what to make.

Spinach, eggs, and mushrooms in this gorgeous salad make it super healthy.
I mean, the dressing does have bacon so we can call this healthy-ish I suppose. But c’mon…maple bacon dressing does sound incredible, right?!
Sweet potato rice is quickly becoming my new love! Very similar to cauliflower rice but with way more nutrients.
This taco bowl also has avocado which is up there at the top of the superfood list.
Who knew a vegetarian meal would make my steak-loving husband SO happy!
