Blueberry Goat Cheese Salad with Light Balsamic Dressing

Instead of my more involved dinner plan, I decided I could at least muster up enough energy to make Blueberry and Goat Cheese Salad with Light Balsamic Dressing.

Our lazy Friday night was spent by the pool.

And the longer I sat there the more I did NOT want to get up and make dinner.

So I told my husband I was going to change out of my bathing suit and into some “real clothes” before starting dinner.

And….well…THIS is what I actually put on 😉

Apparently my version of “real clothes” in summer is snowflake pajama pants- haha.

At least I was comfy, right?!

One of the most wonderful things about these salads (besides the fact they taste incredible) is that literally from start to finish take only 10 minutes!

How to make Blueberry Goat Cheese Salad

First up is making the dressing.

Usually I use light mayo, but this time I used nonfat Greek yogurt for this light balsamic dressing. Highly recommend!

Whisk together nonfat Greek yogurt (or light mayo), balsamic vinegar, and sugar.

Chop up your lettuce of choice and divide evenly on to 4 plates or containers if meal prepping.

I made two and meal prepped two, which gets to be my lunch today- yay!

Then top with fresh blueberries and goat cheese crumbles.

Every good salad needs a crunch factor.

For these I am using glazed/ candied walnuts.

You could top with thinly sliced red onions, but I make a few jars of Sweet Pickled Red Onions to keep in the fridge.

These onions are amazing on tacos, nachos, burgers, and salads.

Top the Blueberry Goat Cheese Salad with the pickled red onions and the light balsamic dressing and dinner is ready.

We felt so healthy and responsible sitting in pajama pants, eating a salad on a Friday night 😉

Maybe we will be more adventurous tonight!

Ingredients

  • 1 cup nonfat plain Greek yogurt (or light mayo)
  • 2 Tbsps balsamic vinegar
  • 1/2 Tbsp sugar
  • 8 cups chopped lettuce of choice
  • 1 pint blueberries
  • 4 oz crumbled goat cheese
  • 4 oz glazed or candied walnuts
  • 1/2 cup sweet pickled red onions (recipe for pickled red onions in post above)

Instructions

  1. Add the yogurt or mayo, balsamic vinegar, and sugar to a bowl and whisk until evenly combined.

  2. Divide the lettuce evenly between four bowls or containers. Top each with blueberries, goat cheese, walnuts, and sweet pickled red onions.

  3. Serve with the light balsamic dressing.
