
Cottage Cheese Sausage Egg Bites
These were the perfect breakfast meal prep recipe, high in protein and low in carbs… Cottage Cheese Sausage Egg Bites.
You could really add any additions you like, but we kept things simple with the chicken breakfast sausage links.

How to make Cottage Cheese Sausage Egg Bites
First crack 6 eggs in a bowl and add a cup of cottage cheese.
Then 1/2 cup shredded cheese of choice and season with kosher salt, pepper, and any other seasoning blend that you love.
I used the Blackstone Lumberjack breakfast seasoning blend.

My granddaughter was my cooking helper on this day, she just loves helping GiGi in the kitchen.
She even learned how to crack an egg 🙂

Mix this together with a spoon, or get yourself a helper like I have.

Next slice some precooked breakfast sausage links, or any other additions you want to add.
She got a kid’s kitchen set for Christmas, so we put her cutting board and knife to good use.

Finally, grease a 12-count regular size muffin tin with nonstick cooking spray.
And scoop the egg mixture in first.
I let her use a 1/4 cup scoop to make this job a little easier and she did amazing.

Throw the sausage slices right in and we are ready for the oven.
These will bake in a 350-degree oven for 19 to 21 minutes.

Let the Cottage Cheese Sausage Egg Bites cool slightly before removing them.
And use a spoon if any of them get a little stuck, although most of these slid right out with no issues.

I stored them in a covered container in the fridge.
And microwaved them as needed throughout the week.

Cottage Cheese Sausage Egg Bites
Cottage Cheese Sausage Egg Bites is an easy meal prep breakfast recipe made in muffin tins, a high protein and low carb way to start the day!
Ingredients
- 1 cup cottage cheese
- 6 eggs
- 1/2 cup shredded cheese of choice
- kosher salt, pepper
- Optional: seasoning blend of choice (I used Blackstone Lumberjack breakfast seasoning)
- 8 cooked chicken breakfast sausage links sliced
- nonstick cooking spray
Instructions

Put cottage cheese, eggs, cheese, kosher salt, pepper, and seasoning blend (if using) in a bowl. Stir until combined.

Spray a 12-count regular size muffin tin with nonstick spray. Spoon the mixture into the muffin tin and add a few sausage slices to each.

Bake in a 350-degree oven for 19 to 21 minutes until eggs are set. Let cool before removing from pan.
Note: If meal prepping these, store, covered, in refrigerator and microwave 30 to 45 seconds to warm before serving.
