Healthy Banana Pancakes with Berry Syrup is the perfect way to fit in protein from the eggs and also lots of fresh fruit.

I have made these for years and my kids absolutely LOVE them.
Here is how to make Healthy Banana Pancakes
The berry syrup goes into a small saucepan, and it’s just blueberries, strawberries, and pure maple syrup.
Bring this to a boil and then reduce the heat to simmer for 5 to 7 minutes.
You could blend it or leave it chunky like this, which is what we prefer.
The pancakes have only three ingredients, and you’ll see why I call them “healthy”.
Beat four eggs in a bowl, add two chopped bananas, and a pinch of ground cinnamon.
Seriously, that’s it 🙂
Then mash the bananas with a fork into the beaten eggs.
It’s up to you if you want to mash them completely smooth or leave a few banana chunks.
Now all that’s left is cooking them in a skillet over medium heat with some butter.
You could use coconut or avocado oil if you want to up the healthiness.
These will cook about 1 minute per side, but be gentle with them as they are very delicate.

When ready to serve these Healthy Banana Pancakes just top them with the Berry Syrup and enjoy 🙂

Healthy Banana Pancakes with Berry Syrup
Healthy Banana Pancakes with Berry Syrup have just a few ingredients and are a great way to enjoy pancakes in a healthy way!
Ingredients
- 1/2 cup blueberries
- 6-8 strawberries stems removed and chopped into small pieces
- 1/3 cup pure maple syrup
- 4 eggs
- 2 ripe bananas
- 1/2 tsp cinnamon
- 2 Tbsps butter
Instructions

Add the berries and syrup to a small saucepan. Bring to a boil and reduce the heat to low and simmer 5 to 7 minutes.

Crack the eggs into a bowl and beat with a fork. Dice the bananas and add them to the eggs along with the cinnamon..

Mash the bananas into the eggs until desired consistency. Leave a few banana chunks if you prefer, or mash until smooth.

Set a skillet over medium heat and add some of the butter. Once melted add a spoonful of banana batter. Cook 1 minute, flip and cook 45 seconds to a minute more. Repeat with remaining banana pancakes.
Note: These pancakes are delicate so be gentle when flipping them.

Serve with the berry syrup.
