Cheesy Chorizo Pancakes
Cheesy Chorizo Pancakes with a spicy maple syrup was our fun snow day breakfast recipe, you can make them in a skillet or Blackstone griddle.
This would be a great brunch or breakfast for dinner dish as well because it’s sweet and savory.
I am not a huge breakfast person, but if you throw in something spicy with it I’m game!
Chorizo is just one of those magical ingredients that is already perfectly seasoned with just the right amount of spice.
Yes, yes, I am a little lazy when it comes to anything baking related so I did use the store bought pancake mix.
If you have a great homemade recipe certainly use that instead.
Here’s how to make Cheesy Chorizo Pancakes
First set a skillet or your Blackstone griddle over medium heat and add the ground chorizo sausage.
Cook for 5 to 6 minutes, breaking it apart as it cooks.
Remove the sausage from the skillet and place on a plate lined with paper towels to help soak up the excess grease.
While the chorizo cooks, make the pancake batter according to the package directions for 10 to 12 pancakes.
My mix required 2 cups of dry mix and water.
Whisk it together until evenly combined.
Then stir in the cooked chorizo and a cup and a half of shredded cheese.
Wipe off the skillet used for the chorizo and set it over medium low heat, or set your Blackstone griddle over medium low heat.
Once it’s hot add some butter and a scoop of the pancake batter.
Flip the pancake after 1 1/2 to 2 minutes.
And cook for about another minute on that side.
Then just repeat with remaining batter.
If using the griddle you can make them all at once!
I made a spicy syrup for the Cheesy Chorizo Pancakes by mixing together pure maple syrup with my favorite hot sauce.
Such a new fun and scrumptious breakfast!

Cheesy Chorizo Pancakes are a sweet and savory treat, would be the perfect brunch or breakfast for dinner meal
Ingredients
- 1 pound ground chorizo sausage
- box of pancake mix
- 1 1/2 cups shredded cheese of choice (I used cheddar)
- 3 Tbsps butter
- 1/2 cup maple syrup
- 2 Tbsps hot sauce of choice
Instructions

Set a skillet or griddle over medium heat and add the chorizo. Cook 5 to 6 minutes, breaking it apart as it cooks. Remove from skillet or griddle and set on a plate lined with paper towels to absorb the excess grease.

Make the pancake mix according to the directions on the box, enough for 10 to 12 pancakes. Add the cooked chorizo and cheese, stir until evenly mixed.

Set another skillet (or clean the same one used for the chorizo) over medium low heat, or preheat your griddle to medium low. Once hot add some butter and a scoop of pancake batter.

Flip the pancake after 1 1/2 to 2 minutes and cook for another minute. Repeat with remaining pancakes.
Note: If making them on a griddle they can be cooked all at once.

Mix the maple syrup and hot sauce, serve with the pancakes.
