My husband just may kill me for this week’s meal plan theme! It’s all meatless meals 🙂
He’s a steak fanatic and a chicken wing junkie…soooooo let’s just hope he doesn’t notice that meat is missing this week 😉
These recipes are so full of flavor I am confident he won’t even miss this meat.

These quesadillas are incredibly easy to make and only have a few ingredients.
You could also make Mediterranean Fried Cauliflower Rice if you have some leftover pesto, feta, and sundried tomatoes.
Apple Walnut Flatbreads
These flatbreads are pretty spectacular too!
Blue cheese, apples, walnuts all on a Stonefire Naan flatbread with a drizzle of honey to top them off.
In this salad, the grilled peaches are the star.
You can use leftover walnuts from the flatbreads in this salad too.
The fun weekend recipe in this week’s meal plan is Smoked Red Pepper and Feta Dip.
If you have leftover Naan from the flatbreads I highly recommend toasting it for this dip.
And if you don’t have a smoker the recipe included directions for roasting the peppers in the oven.
