Roasted Red Pepper and Goat Cheese Pasta

This simple and easy Roasted Red Pepper and Goat Cheese Pasta recipe was what I created for my daughter and she loved it!

My love language is food, meaning I show you how much I love you by making you your favorite foods.

And in this case, designing an entire dish around my daughter’s favorite foods…penne, red peppers, and her all time fave goat cheese.

Here is how to make Roasted Red Pepper and Goat Cheese Pasta

Start with a saucepan over medium heat and add butter and a diced onion.

And some kosher salt, pepper, and crushed red pepper flakes.

Cook this for about 5 minutes, stirring a few times.

Throw in some minced garlic and cook 1 more minute.

Then add in a 16 ounce jar of roasted red peppers, liquid included.

Along with 6 ounces of goat cheese and Italian seasoning.

Let this cook for 5 to 7 minutes, stirring throughout.

The goat cheese melts beautifully.

Next use an immersion blender to blend until smooth.

As I was preparing the sauce, I was also cooking the pasta in salted water according to the package directions.

Drain the pasta really well and put it back into the pot you cooked the pasta in.

Then pour the gorgeous sauce right over top.

Let it cook over medium heat for a minute or two.

This will allow the pasta to absorb all the yumminess of the sauce and thicken a bit.

Taste for seasoning and add more kosher salt, pepper, crushed red pepper flakes, or Italian seasoning as needed.

Your Roasted Red Pepper and Goat Cheese Pasta is now ready to be served!

You could garnish with some shaved parmesan cheese and fresh basil over top if you’d like 🙂

Roasted Red Pepper and Goat Cheese Pasta

Roasted Red Pepper and Goat Cheese Pasta has a creamy and delicious roasted red pepper sauce tossed with pasta of your choice.

Ingredients

  • 3 Tbsps butter
  • 1 onion diced
  • kosher salt, pepper, crushed red pepper flakes
  • 5 cloves garlic minced
  • 1 16 oz jar roasted red peppers
  • 6 oz goat cheese
  • 1 Tbsp Italian seasoning
  • 1 pound pasta of choice (I used penne)
  • Optional: fresh basil and parmesan cheese for garnish

Instructions

  1. Set a saucepan over medium heat. Add the butter and once melted add the diced onion, kosher salt, pepper, crushed red pepper flakes. Cook 5 minutes, stirring a few times. Add the garlic cook 1 more minute.

  2. Add the roasted red peppers to the saucepan (with the liquid from the jar as well), goat cheese, and Italian seasoning. Cook 5 to 7 minutes, stirring a few times. Use an immersion blender to blend the sauce to a smooth consistency.

    Note: If you do not have an immersion blender, a regular blender or food processor can be used, but very important to wait until it's at room temp (if hot the lid can explode off of the blender).

  3. Cook the pasta in salted water according to package directions, drain very well and return the pasta to the pot you cooked it in. Add the sauce to the pot and place over medium heat. Toss the pasta with the sauce and cook 1 to 2 minutes, stirring a few times. Taste for seasoning and add more kosher salt, pepper, crushed red pepper flakes and/or Italian seasoning if needed.

  4. Serve with fresh basil and parmesan cheese over top if desired.
