Traeger Lemon Feta Chicken Wings

I made these Traeger Lemon Feta Chicken Wings using the 0 to 400 cooking method.

But you could certainly smoked them low and slow if you want more of a smoky flavor.

The 0 to 400 will get you a crispier wing in less time.

But the lemon feta sauce was my favorite part of this recipe… soooo flavorful!

How to make Traeger Lemon Feta Chicken Wings

First season 3 pounds of jumbo split chicken wings.

I added olive oil, lemon juice, garlic, smoked paprika, oregano, kosher salt, and pepper.

If you like a little spice, crushed red pepper flakes are a great addition.

Then make this amazing lemon feta dipping sauce (have I mentioned how much I LOOOOVE this stuff 😉 ).

Some plain Greek yogurt, mayo, plus more garlic, lemon juice, paprika, oregano, kosher salt, and pepper.

You have the two options of cooking these on your pellet grill.

Either way you will put the wings right on the grill grate.

You can set the Traeger to 250 degrees and cook them for 2 1/2 hours, flipping halfway through.

Or use the “0 to 400” method for crispier wings.

After the wings are on the grill, set the Traeger to 400 degrees and set a timer for 40 minutes (when the pellet grill is still at 0 degrees).

Flip the wings, then set a timer for 20 to 30 more minutes.

They are simply seasoned, so they would be ok just like this…. but you do remember that dipping sauce, right?!

Ingredients

Traeger Chicken Wings

  • 3 pounds jumbo split chicken wings
  • olive oil, kosher salt, pepper
  • 1 tablespoon lemon juice
  • 1 tablespoon smoked paprika
  • 1 tablespoon dried oregano
  • 5 to 6 cloves garlic minced
  • crushed red pepper flakes (optional)

Lemon Feta Wing Sauce

  • 1 5.3 ounce container plain Greek yogurt
  • 2 tablespoons mayo
  • 1 tablespoon lemon juice
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 2 cloves garlic finely minced
  • 1/3 cup crumbled feta cheese
  • kosher salt, pepper

Instructions

  1. Pat the wings dry and put them in a bowl with olive oil, kosher salt, pepper, lemon juice, paprika, oregano, garlic, and crushed red pepper flakes if using.

  2. Set your pellet grill to 250 degrees, place the wings on the grill grate for 2 1/2 hours, flipping halfway through.

    Or use the "0 to 400" method for crispier wings: Place the wings on your pellet grill grate, then turn it on and set the temperature to 400 degrees. Set a timer for 40 minutes (when the pellet grill is still at 0 degrees). Flip the wings, then set a timer for 20 to 30 more minutes.

    Oven Directions: Place wings on a lined baking sheet and put in a 400 degree oven for 45 minutes, flip them halfway through. Wings should have an internal temperature above 165 degrees.

Lemon Feta Wing Sauce

  1. Put all ingredients in a bowl and stir until combined. Serve with the wings for dipping.

    Note: This makes a lot, probably more than you'll use for the wings. You can cut it in half or use the remaining dip for chicken, salmon, or dip veggies, pita chips or naan bread in it. It will stay good, covered, in the fridge for a few days.
