Ginger Garlic Shrimp Stir Fry

Ginger Garlic Shrimp Stir Fry has a simple stir fry sauce recipe that may not be traditional, but I assure you is easy to make and very tasty.

My daughter was craving a stir fry with shrimp, and since I do like her a little bit ( 😉 ) I decided to make it happen for her.

How to make Ginger Garlic Shrimp Stir Fry

The sauce is a mixture of soy sauce. hoisin sauce, garlic paste, ginger paste, and Sriracha for a little heat.

You can use minced garlic and ginger of course, I just love these pastes that I find in the herb part of the produce section.

SO easy, especially if you’re not a fan of peeling garlic like me.

Whisk the sauce together and mix a few spoonfuls with a pound of peeled and deveined shrimp.

As the shrimp marinates for about 15 minutes, cut the fresh veggies for the stir fry.

I went with my daughter’s favorite veggies…asparagus, mushrooms, red onion, carrots, and a red bell pepper.

I’m a little quirky and LOVE chopping fresh veggies…something about the colors, the freshness, and knowing they will all come together in one dish 🙂

So this dish is all made in one large skillet or wok, if you have one. I’m using my cast iron skillet here.

First a little vegetable oil goes into a skillet over medium high heat and then the shrimp.

Shrimp cook quickly so just about 2 to 3 minutes and remove them from the skillet and set aside.

Then more oil and the gorgeous mix of veggies.

This will take about 8 to 9 minutes, stirring it as it cooks.

Once the veggies are cooked add in the cooked shrimp and the rest of that scrumptious sauce.

Ginger Garlic Shrimp Stir Fry

Stir it all together for another minute or two and your Ginger Garlic Shrimp Stir Fry is ready to be enjoyed by all.

We served ours over rice and it was absolutely perfect.

My go to for a quick and easy rice is using those Uncle Ben’s Jasmine Rice pouches, they microwave in only 90 seconds.

Ginger Garlic Shrimp Stir Fry

Ginger Garlic Shrimp Stir Fry is a delicious and easy stir fry with succulent shrimp and a gorgeous mix of fresh vegetables all made in one skillet!

Ingredients

  • 1/2 cup soy sauce
  • 1/2 cup hoisin sauce
  • 1 1/2 Tbsps garlic paste (or minced garlic)
  • 1 1/2 Tbsps ginger paste (or minced ginger)
  • 1 to 2 Tbsps Sriracha (more or less according to spice preference)
  • 1 pound jumbo shrimp peeled and deveined
  • 2 Tbsps vegetable or sesame oil
  • 1 pound asparagus cut into inch pieces
  • 8 oz mushrooms sliced
  • 1 red onion cut into slices
  • 2 carrots (medium size) cut into slices
  • 1 red bell pepper cut into slices
  • Optional: rice or rice noodles

Instructions

  1. In a bowl, combine soy sauce, hoisin sauce, garlic, ginger, and Sriracha. Whisk until evenly mixed together.

  2. Put the shrimp in a bowl. add 2 to 3 Tbsps of the garlic ginger sauce over the shrimp and mix to coat evenly. Marinate 15 minutes.

  3. In a large skillet over medium high heat, add 1 Tbsp of the sesame or vegetable oil and the shrimp. Cook 2 to 3 minutes, stirring occasionally. Remove the shrimp from the skillet and set aside.

  4. In the same skillet add 1 more Tbsp sesame or vegetable oil and the asparagus, mushrooms, onion, carrots, and bell pepper. Cook 8 to 9 minutes, stirring occasionally.

  5. Add the shrimp and remaining garlic ginger sauce. Cook an additional 1 to 2 minutes. Serve over rice or rice noodles if desired.
