It’s like being a part of a secret club of people who just know that the flavor is unmatched.
Plus, coming from a girl who has used her fair share of smokers, they are super easy to use.
How to make Traeger Grilled Mexican Street Corn Recipe
I brushed some gorgeous sweet corn on the cob with olive oil and sprinkled lightly with kosher salt and pepper.
Then set my Traeger to 350 degrees.
The corn took about 25 minutes total, and I rotated them about a quarter at a time several times.
If you want more a char for your corn you can grill them on high for 10 to 15 minutes.
If you want just corn on the cob you can stop right here, but for Traeger Grilled Mexican Street Corn add a bit more yumminess.
Brush the corn with a mixture of sour cream, mayo, garlic, chili powder, and ground red pepper on all sides.
I find that letting the corn cool slightly helps maximize the amount that this mixture will stick and not melt away.
Then sprinkle with crumbled cotija cheese, cilantro, and more chili powder.
Serve with lime wedges on the side and squeeze them right over top.

Traeger Grilled Mexican Street Corn
Smoked Mexican Street Corn as a yummy side dish
Ingredients
- 6 ears corn on the cob shucked
- 1 Tbsp olive oil
- kosher salt, pepper
- 1/4 cup mayo
- 1/4 cup sour cream
- 1 tsp garlic paste or minced garlic
- 1/2 tsp chili powder (plus more to sprinkle over top)
- pinch of ground red pepper for heat
- 1/2 cup crumbled cotija cheese
- 1/4 cup chopped cilantro
- 6 lime wedges
Instructions

Brush the corn with olive oil and sprinkle with kosher salt.

Place the corn on the Traeger set to 350 degrees for 25 minutes, turn it a few times as it cooks.

While the corn cooks mix together the mayo, sour cream, garlic, chili powder, and a pinch of ground red pepper. Stir until evenly combined.

When the corn is cooked remove and place on a tray or large plate. Let it cool slightly. Brush the corn with the mayo mixture on all sides, then sprinkle with the crumbled cotija cheese.

Sprinkle more chili powder and cilantro over top and serve with fresh lime wedges.
