Ingredients
  • 6 ears corn on the cob shucked
  • 1 Tbsp olive oil
  • kosher salt, pepper
  • 1/4 cup mayo
  • 1/4 cup sour cream
  • 1 tsp garlic paste or minced garlic
  • 1/2 tsp chili powder (plus more to sprinkle over top)
  • pinch of ground red pepper for heat
  • 1/2 cup crumbled cotija cheese
  • 1/4 cup chopped cilantro
  • 6 lime wedges
Instructions
  1. Brush the corn with olive oil and sprinkle with kosher salt.

  2. Place the corn on the Traeger set to 350 degrees for 25 minutes, turn it a few times as it cooks.

  3. While the corn cooks mix together the mayo, sour cream, garlic, chili powder, and a pinch of ground red pepper. Stir until evenly combined.

  4. When the corn is cooked remove and place on a tray or large plate. Let it cool slightly. Brush the corn with the mayo mixture on all sides, then sprinkle with the crumbled cotija cheese.

  5. Sprinkle more chili powder and cilantro over top and serve with fresh lime wedges.
