I did too!

This is the ultimate grown up version of a grilled cheese sandwich with ALL the flavors going on.

We’ve got sweet, spicy, salty, all with the melty cheesy goodness.

I decided to make the bacon for these bacon melts in the air fryer.

SO FREAKING EASY!

You literally just lay the bacon in the basket, set it at 390 for 15 minutes and walk away.

No flipping and no getting burned by grease.

This was thick cut deli bacon, so thinner bacon will take less time of course.

How to make Spicy Honey Bacon Jalapeno Melts

While the bacon cooked I whisked together some honey and Tabasco sauce for the spicy honey.

For the bacon melts I set a skillet over low heat with a Tbsp of butter.

Place two slices of bread in the melted butter.

Moving the bread around to get as much butter as possible soaked up in the bread.

Place a slice of cheese and some of the bacon on one slice of bread.

Drizzle some of the spicy honey over the bacon.

Then top with minced jalapeno and another slice of cheese.

Place the empty bread over top, buttered side up.

Cover the skillet and let it cook 2 to 3 minutes per side.

Covering the skillet helps make sure the heat stays in, making your bacon melt more meltier.

Spicy Honey Bacon Jalapeno Melts

The ultimate sandwich with cheese and a sweet and spicy flavor combo

Ingredients

  • 8 slices thick cut bacon
  • 1/4 cup honey
  • 15-20 dashes Tabasco sauce (or more or less to taste)
  • 4 Tbsps butter
  • 8 slices bread
  • 8 slices sharp cheddar cheese
  • 1 jalapeno (seeds and white ribs removed) minced

Instructions

  1. Cut the bacon slices in half. Cook in a skillet or air fryer.

    Skillet: Place a skillet over medium low heat and cook the bacon 10-15 minutes, turning a few times. Cook time may vary based on thickness of the bacon.

    Air Fryer: Lay the bacon in the air fryer basket. Set the air fryer to 390 degrees for 10-15 minutes. Cook time may vary based on thickness of the bacon.

  2. While the bacon cooks, mix together the honey and Tabasco sauce in a small bowl.

  3. Once the bacon is cooked set a small skillet over low heat. Add 1 Tbsp butter and lay two slices of bread in the skillet. Move the bread around so it absorbs most of the butter.

  4. On one slice of bread place a slice of cheese, 4 half slices of bacon, drizzle with the spicy honey, add some of the jalapenos and another slice of cheese. Place the empty piece of bread over top, buttered side up.
  5. Put a lid on the skillet for 2-3 minutes, flip the sandwich and cover again. Cook 2-3 more minutes. Repeat with remaining sandwiches.
