Spicy Honey Bacon Jalapeno Melts
I mean…just say it out loud, ready and GO! Spicy… Honey… Bacon… Jalapeno… Melts! Yes, Spicy Honey Bacon Jalapeno Melts!
This is the ultimate grown up version of a grilled cheese sandwich with ALL the flavors going on.
I decided to make the bacon for these bacon melts in the air fryer, but the Blackstone griddle is a great choice too!

How to make Spicy Honey Bacon Jalapeno Melts
For the bacon melts I set a skillet over low heat with butter, but you could make them all at once on your Blackstone griddle.
Place two slices of bread in the melted butter.
Moving the bread around to get as much butter as possible soaked up in the bread.
Place a slice of cheese and some of the bacon on one slice of bread.
Drizzle some of the spicy honey over the bacon.

Then top with minced jalapeno and another slice of cheese.
Place the empty bread over top, buttered side up.

Cover the skillet or use your griddle melting dome and let cook 2 to 3 minutes per side.

Spicy Honey Bacon Jalapeno Melts
The ultimate sandwich with cheese and a sweet and spicy flavor combo
Ingredients
- 8 slices thick cut bacon
- 1/4 cup honey
- 15-20 dashes Tabasco sauce (or more or less to taste)
- 4 tablespoons butter
- 8 slices bread
- 8 slices sharp cheddar cheese
- 1 jalapeno (seeds and white ribs removed) minced
Instructions

Cut the bacon slices in half. Cook in a skillet, Blackstone griddle, or air fryer.
Skillet/ Griddle: Place a skillet or griddle over medium low heat and cook the bacon 8-10 minutes, turning a few times. Cook time may vary based on thickness of the bacon.
Air Fryer: Lay the bacon in the air fryer basket. Set the air fryer to 390 degrees for 10-15 minutes. Cook time may vary based on thickness of the bacon.

While the bacon cooks, mix together the honey and Tabasco sauce in a small bowl.

Once the bacon is cooked set skillet or your griddle over low heat. Add 1 tablespoon butter and lay two slices of bread in the skillet. Move the bread around so it absorbs most of the butter.
Note: If using your Blackstone griddle, add all butter and cook all sandwiches at the same time.

On one slice of bread place a slice of cheese, 4 half slices of bacon, drizzle with the spicy honey, add some of the jalapenos and another slice of cheese. Place the empty piece of bread over top, buttered side up.

Put a lid on the skillet or griddle melting dome for 2-3 minutes, flip the sandwich and cover again. Cook 2-3 more minutes. Repeat with remaining sandwiches.
