Cilantro Lime Chicken with Spicy Honey
A healthy and easy Cilantro Lime Chicken with Spicy Honey recipe?! …YUM!
Grilling season is here!!!
This is our first grilling recipe of the year and it did not disappoint.
I cut each chicken breast in half, lengthwise making them thinner.
This creates more surface for the marinade to flavor.
How to Make Cilantro Lime Chicken with Spicy Honey
First place them in a gallon size plastic baggie.
Then add juice of one lime, cilantro, garlic, along with my seasonings (chili powder, season salt, cumin, paprika, kosher salt, and pepper).
Close the bag and mix and massage the bag until it’s evenly coated, which takes a minute or two.
Store in the fridge for a few hours or overnight.
Next I am going to teach you my very easy, super amazing trick for making the most delicious grilled chicken ever…
I simply say to my husband “Hey, honey, can you grill these?!”, along with handing him a nice cold beer of course 🙂
And he does! This could be one more reason why I love grilling so much 🙂
Just a few minutes on each side since they are thin.
While my husband was grilling outside, I made our side salad inside along with this spicy honey to drizzle over top.
Make it as spicy as you like, or not spicy at all.
Just some honey, lime juice, hot sauce, and chili powder blended together.
When ready to serve, drizzle the spicy honey on top of the Cilantro Lime Chicken and dinner is served!
.
Extra Cilantro Lime Chicken?
Prep a few salads by placing the chicken over top of lettuce and cilantro along with your choice of cheese (I used Cotija).
I used a store bought, low calorie yogurt dressing and put some tortilla strips on the side.
The perfect side for this dish is Grilled Caesar Salad.
Another easy and delicious dinner idea is Pickle Brined Chicken.
