Ingredients
  • 8 slices thick cut bacon
  • 1/4 cup honey
  • 15-20 dashes Tabasco sauce (or more or less to taste)
  • 4 tablespoons butter
  • 8 slices bread
  • 8 slices sharp cheddar cheese
  • 1 jalapeno (seeds and white ribs removed) minced
Instructions
  1. Cut the bacon slices in half. Cook in a skillet, Blackstone griddle, or air fryer.

    Skillet/ Griddle: Place a skillet or griddle over medium low heat and cook the bacon 8-10 minutes, turning a few times. Cook time may vary based on thickness of the bacon.

    Air Fryer: Lay the bacon in the air fryer basket. Set the air fryer to 390 degrees for 10-15 minutes. Cook time may vary based on thickness of the bacon.

  2. While the bacon cooks, mix together the honey and Tabasco sauce in a small bowl.

  3. Once the bacon is cooked set skillet or your griddle over low heat. Add 1 tablespoon butter and lay two slices of bread in the skillet. Move the bread around so it absorbs most of the butter.

    Note: If using your Blackstone griddle, add all butter and cook all sandwiches at the same time.

  4. On one slice of bread place a slice of cheese, 4 half slices of bacon, drizzle with the spicy honey, add some of the jalapenos and another slice of cheese. Place the empty piece of bread over top, buttered side up.
  5. Put a lid on the skillet or griddle melting dome for 2-3 minutes, flip the sandwich and cover again. Cook 2-3 more minutes. Repeat with remaining sandwiches.
