
Apple Chicken Broccoli Salad
This broccoli salad is more of a healthy lunch or dinner, rather than the side dish we all know and love. Let me show you how I made Apple Chicken Broccoli Salad!
And it has a homemade high protein dressing made with cottage cheese.
The base is a bag of broccoli slaw.
This particular bag of slaw had more large broccoli florets than I liked, so I did cut some of them into smaller slices.

How to make Apple Chicken Broccoli Salad
First put the broccoli slaw in a large bowl.
Then a cup of diced, cooked chicken and a diced Honeycrisp apple.
I added my meal prepped chicken that I cooked on my Blackstone griddle that was stored in my fridge.

Other optional toppings include dried cranberries, pecans, and feta or blue cheese crumbles.

Now for the healthy salad dressing that starts with 1/2 cup of cottage cheese in a food processor or blender.

Then add 3 tablespoons apple cider vinegar, a tablespoon each of honey and Dijon mustard, plus kosher salt and pepper.

And blend for at least a minute until smooth.

Pour the dressing on the salad, making sure to scrape every last bit.
I realized at this point that I should have used a bigger bowl 😉

Use tongs to toss everything together and taste for seasoning.
Add more kosher salt and pepper if needed.

Just look at this absolutely gorgeous and healthy salad!!

Apple Chicken Broccoli Salad
Apple Chicken Broccoli Salad uses broccoli slaw as the base and has a healthy, high protein dressing made with cottage cheese!
Ingredients
- 1/2 cup cottage cheese
- 3 tablespoons apple cider vinegar
- 1 tablespoon Dijon mustard
- 1 tablespoon honey
- kosher salt, pepper
- 1 (12-ounce) bag broccoli slaw
- 1 cup cooked, diced chicken
- 1 large Honeycrisp apple diced
- Optional toppings: dried cranberries, feta or blue cheese crumbles, pecans
Instructions

Put the cottage cheese, apple cider vinegar, Dijon mustard, honey, kosher salt, and pepper in a blender or food processor. Blend until smooth, about 1 minute.

Put broccoli slaw, chicken, apples, and optional toppings such as dried cranberries, feta or blue cheese crumbles, and/or pecans in a large bowl with the dressing. Toss until combined and divide between two plates or bowls.
Note: Stays good, covered, in the refrigerator for 2 days.
