Buffalo Chicken Spinach Quinoa Bowls
Buffalo Chicken Spinach Quinoa Bowls is a healthy recipe that is kind of a cross between a salad and a power bowl.
We are taking buffalo chicken, which to me is a quite the treat, and combining it with healthy spinach, quinoa, and avocado.
So you sort of have the best of both worlds 🙂
A healthy meal without that “too healthy” feel.
How to make Buffalo Chicken Spinach Quinoa Bowls
First we will make the quinoa according to the package directions.
Prepare 1/2 cup of dry quinoa, so we will end up with 1 1/2 cups total.
Once the quinoa is done cooking, just let it cool or at least come to room temperature.
Now we are ready to assemble these gorgeous and healthy bowls of goodness.
The chicken I am using I made in the air fryer and tossed with some buffalo sauce.
First divide 4 cups of fresh spinach between two bowls.
Then top each with the cooked and cooled quinoa.
Then slice one avocado and put half onto each quinoa bowl.
Spinach, quinoa, and avocado are three powerhouse superfoods, so you can feel really good about this meal.
Finally, top with the chicken bites that have been tossed in buffalo sauce and any cheese of choice.
I went with blue cheese crumbles since it goes traditionally with anything buffalo-y 😉

I actually used the yogurt ranch to keep with the healthy theme.
Now that is one pretty power bowl in my opinion!

Buffalo Chicken Spinach Quinoa Bowls
Buffalo Chicken Spinach Quinoa Bowls is a healthy recipe served with avocado and Greek yogurt ranch dressing, so easy to make!
Ingredients
- 1/2 cup quinoa
- 1 to 1 1/2 cups cooked diced or shredded chicken
- 3 to 4 tablespoons buffalo sauce
- 4 cups fresh spinach
- 1 avocado sliced
- 1/3 cup blue cheese crumbles or cheese of choice
- more buffalo sauce, ranch dressing (I used Bolthouse Farms yogurt ranch)
Instructions

Cook the quinoa in a saucepan according to package directions and let it cool (this will make 1 1/2 cups total).

Toss the chicken with the buffalo sauce until evenly coated.

Divide the spinach between two bowls. Top each with the cooled quinoa, buffalo chicken, sliced avocado, and cheese.

Top with more buffalo sauce and ranch dressing (I mixed mine together).
