Mango and Spinach Glow Bowls
Why give this recipe a boring name like “spinach salads” when I can give it a cute and catchy name like Mango and Spinach Glow Bowls?!
This healthy meal is sooooo packed full of superfoods and nutrients, it’s sure to have you absolutely GLOWING 🙂
Plus it will have you feeling fantastic on the inside while looking incredible on the outside!
I added some chicken to mine, but leave that out for great vegetarian recipe.
How to make Mango and Spinach Glow Bowls
First make some quinoa according to the package directions.
You’ll need 1/2 cup of dry quinoa to make 1 1/2 cups of cooked.
Then just let this cool.
And prepare the rest of your ingredients.
The salad dressing is super simple and extra healthy!
Put 1/4 cup olive oil, 2 tablespoons lemon juice, and a little Dijon mustard, honey, and ginger in a bowl or mason jar.
Also season with kosher salt and pepper before either whisking or shaking together.
Next, divide the spinach and quinoa between two bowls.
And add diced mango, dried cranberries, some cheese, and walnuts.
I also added some cooked chicken, but that’s optional.
Mango and Spinach Glow Bowls are pure feel-good food at it’s finest 🙂
Drizzle the lemon dressing over top, cut it all up, and mix together before digging in.
SOOOO yummy AND healthy 🙂
You could certainly meal prep these too, just pack the lemon dressing on the side.

Mango and Spinach Glow Bowls
Mango and Spinach Glow Bowls are an easy superfood recipe perfect for dinner, lunch, or meal prepping for that perfect healthy glow!
Ingredients
- 4 to 5 cups fresh spinach
- 1 1/2 cups cooked and cooled quinoa
- 3/4 cup cooked, diced chicken (or leave out for a vegetarian version)
- 1 large mango diced
- 1/2 cup dried cranberries
- 1/2 cup walnuts
- 1/2 cup feta cheese
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1/2 tablespoon Dijon mustard
- 1/2 tablespoon honey
- 2 teaspoons grated ginger
- kosher salt, pepper
Instructions

Divide the spinach and quinoa between two bowls and top each with the chicken (if using), mango, cranberries, walnuts, and feta.

Put the olive oil, lemon juice, Dijon, honey, ginger, kosher salt, and pepper in a bowl or mason jar. Whisk together or shake the mason jar and drizzle over the glow bowls.
Note: If meal prepping just pack the dressing on the side and store in the fridge for up to 2 days.
