Jerk Salmon with Mango Relish looks and tastes like a fancy restaurant dish, but honestly it was fairly simple to throw together.
Most of the work involved is for the mango relish.
But just a few minutes of chopping and a few minutes in a saucepan and it’s ready to go.
How to Make Jerk Salmon with Mango Relish
For the relish you’ll need two mangos, a small red onion, jalapeno, honey, cilantro, and vinegar.

I find that peeling the mangos first is best.
You won’t lose as much of the mango with peeling compared to cutting with a knife.
And remember to cut around the pit in the center.

Once everything is diced, set a saucepan over medium heat.

First add a little olive oil and then the onions.
Cook the onions by themselves for 3 to 4 minutes.

Then add in the diced mangos, jalapeno, cilantro, vinegar, honey, and some kosher salt, pepper, and crushed red pepper flakes.
And cook 5 to 6 more minutes, stirring a few times.

For the salmon, start with brushing four salmon fillets with soy sauce.
Then sprinkle your favorite Caribbean Jerk seasoning on all sides. I love the Savory Spice Caribbean Jerk seasoning!

Once the salmon is seasoned to perfection, you can bake at 400 degrees or air fry them at 400 degrees for 12 to 14 minutes.
I went with the air fryer because I didn’t have to wait for it to preheat or get out a baking sheet.

Serve Jerk Salmon with Mango Relish over rice or cauliflower rice if desired 🙂


And with a drizzle of spicy mayo if you like!

Jerk Salmon with Mango Relish
Jerk Salmon with Mango Relish is a healthy, flavorful, easy meal to prepare! Great in the oven or air fryer, served over rice or cauliflower rice
Ingredients
- 1/2 Tbsp olive oil
- 1 small red onion (or 1/2 regular size red onion) diced
- 2 mangos peeled and diced
- 1 jalapeno diced, seeds removed
- 1/2 cup cilantro chopped
- 2 Tbsps red wine vinegar
- 1 Tbsp honey
- kosher salt, pepper, crushed red pepper flakes
- 4 salmon fillets
- 1 Tbsp soy sauce
- 1 Tbsp Caribbean Jerk seasoning
- Optional: rice or cauliflower rice, and spicy mayo
Instructions

Put a saucepan over medium heat and add the olive oil and onion. Cook 3 to 4 minutes.

Add the mango, jalapeno, most of the cilantro (save some for garnish), vinegar, honey, kosher salt, pepper and crushed red pepper flakes. Cook 5 to 6 more minutes.

Brush the salmon fillets with the soy sauce and sprinkle the Caribbean Jerk seasoning on all sides.

Cook the salmon according to one of these methods:
Oven:
Bake in a 400 degree oven for 12 to 14 minutes.
Air Fryer: Air Fryer- Place the salmon in the air fryer basket and set it to 400 degrees for 12 to 14 minutes.

Serve the salmon with the mango relish, cilantro, and with rice or cauliflower rice, and/or spicy mayo if desired.
