Blackberry Lime Chicken Avocado Salads
I made the chicken for these Blackberry Lime Chicken Avocado Salads on my Blackstone griddle, or you could use a skillet.
The easy homemade blackberry lime salad dressing was also the chicken glaze making this dish even easier.
How to make Blackberry Lime Chicken Avocado Salads
To make the dressing combine olive oil, blackberry jam, lime juice, Dijon mustard, kosher salt, and pepper.
I also added a little lime zest.
And whisk until combined.

I cooked the diced chicken on the griddle for a few minutes in cooking oil and seasoned with kosher salt and pepper.
Mix on the griddle or skillet for a few minutes and then add some of the salad dressing.
It will create a flavorful glaze on the chicken as it cooks for a few more minutes.

Now we assemble these gorgeous salads!!

Lay down some lettuce first, I used chopped romaine.
Add the cooked chicken, goat cheese, diced avocado, and then the blackberry lime salad dressing.

Blackberry Chicken Avocado Salads may be the new official salad of summer at our house 🙂

This is exactly how I enjoyed mine.
My husband and son had their salad with Caesar dressing on the side and a slice of toasted ciabatta bread with the chicken separate.

Blackberry Lime Chicken Avocado Salads
Blackberry Lime Chicken Avocado Salads is a fresh summer or spring salad recipe with an easy homemade blackberry lime salad dressing!
Ingredients
- 3 tablespoons olive oil
- 3 tablespoons blackberry jam
- 2 tablespoons lime juice, plus a little lime zest
- 1 tablespoon Dijon mustard
- kosher salt, pepper
- cooking oil of choice
- 2 medium size boneless skinless chicken breasts or thighs cut into bite size pieces
- 5 to 6 cups chopped lettuce of choice
- 1 avocado diced
- 2 ounces goat cheese crumbles
Instructions

Put the olive oil, blackberry jam, lime juice and zest, Dijon, kosher salt, and pepper in a bowl and whisk until combined.

Preheat a skillet or your Blackstone griddle over medium heat. Add cooking oil of choice the chicken, kosher salt, and pepper and cook for 3 minutes. Then add a few spoonfuls of the salad dressing and cook 3 to 4 more minutes or until chicken is cooked through. Let cool slightly.

Divide the lettuce between two plates or bowls and top with the chicken, avocado, goat cheese, and remaining salad dressing.
