Blackberry Lime Chicken Avocado Salads is a fresh summer or spring salad recipe with an easy homemade blackberry lime salad dressing!

Ingredients
  • 3 tablespoons olive oil
  • 3 tablespoons blackberry jam
  • 2 tablespoons lime juice, plus a little lime zest
  • 1 tablespoon Dijon mustard
  • kosher salt, pepper
  • cooking oil of choice
  • 2 medium size boneless skinless chicken breasts or thighs cut into bite size pieces
  • 5 to 6 cups chopped lettuce of choice
  • 1 avocado diced
  • 2 ounces goat cheese crumbles
Instructions
  1. Put the olive oil, blackberry jam, lime juice and zest, Dijon, kosher salt, and pepper in a bowl and whisk until combined.

  2. Preheat a skillet or your Blackstone griddle over medium heat. Add cooking oil of choice the chicken, kosher salt, and pepper and cook for 3 minutes. Then add a few spoonfuls of the salad dressing and cook 3 to 4 more minutes or until chicken is cooked through. Let cool slightly.

  3. Divide the lettuce between two plates or bowls and top with the chicken, avocado, goat cheese, and remaining salad dressing.
