Ingredients
  • 4 to 5 cups fresh spinach
  • 1 1/2 cups cooked and cooled quinoa
  • 3/4 cup cooked, diced chicken (or leave out for a vegetarian version)
  • 1 large mango diced
  • 1/2 cup dried cranberries
  • 1/2 cup walnuts
  • 1/2 cup feta cheese
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1/2 tablespoon Dijon mustard
  • 1/2 tablespoon honey
  • 2 teaspoons grated ginger
  • kosher salt, pepper
Instructions
  1. Divide the spinach and quinoa between two bowls and top each with the chicken (if using), mango, cranberries, walnuts, and feta.

  2. Put the olive oil, lemon juice, Dijon, honey, ginger, kosher salt, and pepper in a bowl or mason jar. Whisk together or shake the mason jar and drizzle over the glow bowls.

    Note: If meal prepping just pack the dressing on the side and store in the fridge for up to 2 days.
