
Mango and Spinach Glow Bowls are an easy superfood recipe perfect for dinner, lunch, or meal prepping for that perfect healthy glow!
Divide the spinach and quinoa between two bowls and top each with the chicken (if using), mango, cranberries, walnuts, and feta.
Put the olive oil, lemon juice, Dijon, honey, ginger, kosher salt, and pepper in a bowl or mason jar. Whisk together or shake the mason jar and drizzle over the glow bowls.
Note: If meal prepping just pack the dressing on the side and store in the fridge for up to 2 days.
