Lox and Bagel Casserole
Lox and Bagel Casserole is a unique and easy breakfast or brunch recipe!
Lox and bagels is typically a breakfast or brunch of lox, or brined salmon, along with a bagel, cream cheese, red onion, capers, and lemon.
I am using smoked salmon because my store didn’t have lox, but it’s very similar.
And capers seemed like they would overwhelm the casserole, so I am leaving them out.
How to make Lox and Bagel Casserole
First cut 3 bagels into cubes and put them in a greased 9×13 casserole dish.
Then flake about 4 to 6 ounces of smoked salmon, or lox, over top.
Then crack 8 eggs into a bowl and add 1 1/2 cups milk.
And season with kosher salt, pepper, and Old Bay.
Next whisk or beat with a fork until combined.
And pour the egg mixture over the bagels and salmon.
Press the bagels slightly and let this sit for a few minutes.
Then bake in a 375 degree oven for about 30 minutes.
Finally, cut an 8 ounce block of cream cheese into 8 pieces.
And place them over the casserole along with some thin sliced red onions.
Back into the oven this will go for another 12 to 15 minutes.
Garnish Lox and Bagel Casserole with parsley and serve with lemon wedges if desired 🙂
I did spread the melty cream cheese slightly with the back of a spoon.
This is enough for 8 servings, clearly marked by the dollops of cream cheese.
Leftovers are just as good warmed up the next day!

Lox and Bagel Casserole turns this traditional brunch recipe into a breakfast casserole recipe made with smoked salmon or lox!
Ingredients
- 3 bagels cut into cubes
- 4 to 6 ounces lox or smoked salmon flaked into small pieces
- 8 eggs
- 1 1/2 cups milk (I used whole milk)
- kosher salt, pepper, Old Bay seasoning
- 8 ounce block cream cheese cut in 8 pieces
- 1/2 cup thin sliced red onions
- Optional: lemon wedges on the side, chopped parsley
Instructions

Put the bagel cubes and lox or smoked salmon pieces in a greased 9×13 casserole dish.

Crack the eggs in a bowl add the milk, kosher salt, pepper, and Old Bay seasoning. Whisk until combined.

Pour this mixture over the lox/ salmon and bagels. Press down so the bagels start to absorb the egg mixture. Let this sit for 10 minutes, pressing down a few more times.

Bake in a 375 degree oven for 30 minutes.

Put the pieces of cream cheese and sliced red onions over the casserole. Bake another 12 to 15 minutes. Spread the melty cream cheese slightly with the back of a spoons and serve with lemon wedges or parsley over top.
