Ingredients
  • 1/2 cup quinoa
  • 1 to 1 1/2 cups cooked diced or shredded chicken
  • 3 to 4 tablespoons buffalo sauce
  • 4 cups fresh spinach
  • 1 avocado sliced
  • 1/3 cup blue cheese crumbles or cheese of choice
  • more buffalo sauce, ranch dressing (I used Bolthouse Farms yogurt ranch)
Instructions
  1. Cook the quinoa in a saucepan according to package directions and let it cool (this will make 1 1/2 cups total).

  2. Toss the chicken with the buffalo sauce until evenly coated.

  3. Divide the spinach between two bowls. Top each with the cooled quinoa, buffalo chicken, sliced avocado, and cheese.

  4. Top with more buffalo sauce and ranch dressing (I mixed mine together).
