
Buffalo Chicken Spinach Quinoa Bowls is a healthy recipe served with avocado and Greek yogurt ranch dressing, so easy to make!
Cook the quinoa in a saucepan according to package directions and let it cool (this will make 1 1/2 cups total).
Toss the chicken with the buffalo sauce until evenly coated.
Divide the spinach between two bowls. Top each with the cooled quinoa, buffalo chicken, sliced avocado, and cheese.
Top with more buffalo sauce and ranch dressing (I mixed mine together).
