Southwest Chicken Meal Prep Salads

These Southwest Chicken Meal Prep Salads will help my sanity and they are super yummy!

It’s Sunday, friends.

That means two things to me…a little Sunday Funday in the afternoon.

And a little “oh crap, I have to go to work tomorrow” as evening sets in.

I can at least relax a little knowing that earlier today I prepped a few salads to have throughout this week.

And it was pretty simple to do.

How to make Southwest Chicken Meal Prep Salads

I brushed two chicken breasts with olive oil and seasoned them with some BBQ seasoning.

They can be grilled or baked, and this time I chose to grill them since the weather was nice.

Over medium high heat these took about 5 minutes per side.

If you bake them I would recommend a 400 degree oven for 30 to 35 minutes.

Since I make these salads quite often I will say I prefer the grilled chicken, but the baked is my go-to for the colder months.

My grocery store sells romaine lettuce hearts in a three pack, and that’s what I used for these salads.

Just chop them up and divide between five meal prep containers.

Top each with cheese, corn, and black beans while the chicken cools.

Once the chicken is cool, dice or shred it according to your preference.

Top each salad with some of the chicken.

I of course snacked on some of the chicken as I made these, just the chicken alone was super good.

For the dressing I combined half BBQ sauce and half ranch dressing and put them in 2 ounce sauce cups with lids.

So that’s basically it!

Making these Southwest Chicken Meal Prep Salads saves me some worries throughout the week about lunches and eating meals on the go.

With working teenagers in the house and my husband and I working, these are lucky to last even three days đŸ™‚

Southwest Chicken Meal Prep Salads

Ingredients

  • 2 boneless skinless chicken breasts
  • 1 Tbsp olive oil
  • 1 1/2 Tbsps BBQ seasoning
  • 3 romaine lettuce hearts
  • 1 15 oz can corn drained
  • 1 15 oz can black beans drained and rinsed
  • 1 cup shredded cheddar cheese
  • 6 oz ranch dressing
  • 6 oz BBQ sauce

Instructions

  1. Brush the chicken breasts with olive oil and sprinkle both sides with BBQ seasoning. Grill the chicken over medium to medium high heat for 4 to 6 minutes per side, depending on thickness of the chicken.

    Note: Chicken can also be baked in a dish at 400 degrees for 30 to 35 minutes.

  2. Once the chicken is cooled slightly, dice or shred the chicken.

  3. Cut the romaine lettuce and divide the lettuce between five meal prep containers.

  4. Top each with the chicken, corn, black beans, and cheese.

  5. Mix together the ranch and BBQ sauce. Divide the dressing into five 2 oz. containers with lids and place the dressing container with the salad.

  6. Store in the fridge, best if eaten within three days.
