BBQ Pork and Cornbread Stuffed Poblanos

With recipes like Smoked BBQ Pork Stuffed Jalapenos and BBQ Pork and Cornbread Stuffed Poblanos we enjoyed every bit of our leftover pulled pork!

Well…I did it!

I successfully (and creatively) used about 4 pounds of leftover pulled pork from when the husband and I smoked an 11 pound pork shoulder last weekend!

BBQ Pulled Pork definitely feeds a crowd, and we had so many leftovers I thought we’d get burnt out.

I’m a sucker for anything with poblano peppers.

The flavor is perfect and with little to no heat.

I have made Chorizo Stuffed Poblanos with Avocado Cream Sauce before, so I was super excited to try these cornbread stuffed poblanos as well.

Chorizo Stuffed Poblanos with Avocado Cream

This dish starts with three large poblano peppers cut in half, and most of the seeds and white ribs removed.

Arranging them in a 9×13 casserole dish so they are as flat as possible was a bit tricky, but I made it work.

Cut Poblanos

Fill each pepper with some leftover BBQ pulled pork that has been mixed with BBQ sauce.

We like Sweet Baby Ray’s BBQ Sauce, but use your favorite brand if you have one.

Next prepare a box of cornbread mix according to the package directions.

Pour the cornbread batter carefully into each pepper.

Let it settle for a minute or two and then add more of the batter.

I had some batter leftover, enough to make 6 cornbread muffins.

Or you could discard the leftovers, whatever you prefer 🙂

They go into a 375 degree oven for 35-40 minutes and come out golden brown and delicious!

I was surprised how much of the cornbread stayed in the peppers, just a small amount of spillage.

BBQ Pork and Cornbread Stuffed Poblanos

A creative way to use pulled pork, served with cornbread stuffed in a poblano

Ingredients

  • 3 large poblano peppers
  • 2 1/2 cups leftover pulled pork
  • 1/2 cup BBQ sauce
  • 1 box cornbread mix (plus ingredients to prepare according to package directions)
  • Optional: more BBQ sauce drizzled over top

Instructions

  1. Cut the poblano peppers in half lengthwise, remove the seeds and white ribs. Lay them cut side up in a 9×13 casserole dish as flat as you can get them.

  2. Mix together the pulled pork and BBQ sauce. Stuff each pepper with the BBQ pulled pork.

  3. Prepare the cornbread batter according to package directions. Pour some batter into each pepper. The batter will settle into the pepper, so after a minute or two top each with more batter.

    Discard extra batter or make a few cornbread muffins with remaining batter if desired.

  4. Bake in a 375 degree oven for 35-40 minutes.

  5. Serve with more BBQ sauce on top if desired.
