A creative way to use pulled pork, served with cornbread stuffed in a poblano
Cut the poblano peppers in half lengthwise, remove the seeds and white ribs. Lay them cut side up in a 9x13 casserole dish as flat as you can get them.
Mix together the pulled pork and BBQ sauce. Stuff each pepper with the BBQ pulled pork.
Prepare the cornbread batter according to package directions. Pour some batter into each pepper. The batter will settle into the pepper, so after a minute or two top each with more batter.
Discard extra batter or make a few cornbread muffins with remaining batter if desired.
Bake in a 375 degree oven for 35-40 minutes.
Serve with more BBQ sauce on top if desired.
