When you smoke a whole ham for Christmas and have lots leftover ham, the question becomes…what to do with all this ham?! Well the answer today, folks, is Ham and Cheese Breakfast Biscuits 🙂

Technically these were breakfast-for-dinner biscuits and they were a huge hit with my family.

How to Make Ham and Cheese Breakfast Biscuits

I got a roll of jumbo biscuits from the store and baked those according to the package directions.

I put them in a 9×13 casserole dish that I sprayed with some cooking oil.

As those baked I made the eggs for our breakfast sandwiches.

Just beat 6 eggs in a bowl and season with just a bit of kosher salt and pepper.

Then pour them in a large skillet with some butter, flip after a minute or two.

You have kind of like a giant egg pancake, and simply cut into 8 pieces.

Confession: I tried the trick with cracking an egg in a mason jar lid right into the pan.

Yeah, that didn’t work out too well for me.

If you get the flaky biscuits they naturally separate in the center.

So all I had to do was peel off the top half of each one.

Divide about a pound of pound of this gorgeous leftover ham, or get a pound of ham from the deli.

Place them evenly over the cooked biscuits like this 🙂

Next, top each with a piece of the egg and a slice of cheese.

Finally brush the tops with some melted butter that’s been mixed with mustard and worcestershire sauce.

Cover with foil and bake at 350 degrees for 15 minutes.

Everything is already cooked, we just want it to warm up and melt the cheese.

Ham and Cheese Breakfast Biscuits come out of the oven smelling heavenly and full of ooey gooey cheesy goodness!

Ingredients

  • 1 roll refrigerated jumbo flaky biscuits (8 biscuits in a pack)
  • 2 Tbsps melted butter
  • 6 eggs
  • 1 pound sliced ham
  • 8 slices cheese of choice (colby jack, swiss, cheddar)
  • kosher salt, pepper
  • 1 tsp mustard
  • 1 tsp worcestershire sauce

Instructions

  1. Bake the biscuits according to package directions in a greased 9×13 dish.. Let cool slightly and remove the top part of each biscuit (the flaky biscuits usually separate around the middle making them easy to peel the top half off).

  2. Beat the 6 eggs in a bowl and add some kosher salt and pepper. In a large skillet over medium low heat add 1 Tbsp of the butter and pour the eggs in a single layer. Let cook for 2 minutes, flip, and cook another minute or two. Cut into 8 pieces. 

  3. Divide the ham evenly among the 8 biscuits, lay a piece of egg on each over the ham, and top each with a slice of cheese. Put the biscuit tops over top.

  4. Mix the mustard and worcestershire sauce with the remaining melted butter. Brush over top of each biscuit. Cover with foil and place in a 350 degree oven for 15 minutes.
