High Protein Turkey Taco Stuffed Avocado
This recipe for High Protein Turkey Taco Stuffed Avocado is part of my Blackstone High Protein Meal Prep Series, so the turkey was already cooked when I assembled these avocados.

How to make High Protein Turkey Taco Stuffed Avocado
Preheat a skillet or your Blackstone griddle to medium heat.
Add cooking oil of choice, ground turkey, and taco seasoning.
Cook the turkey 7 to 10 minutes, mixing and breaking it apart with your spatulas.
I made sweet potatoes at the same time on the griddle that I used in the other meal prep recipes.

Then I packed up the turkey to use throughout the week, making my healthy meal plan super quick and easy for the week.

And of course had my High Protein Creamy Taco Sauce made and ready to go!

Cut each avocado in half, remove the pit, and scoop out some of the inside to hollow out a space for the taco filling.
I added the avocado that I removed to my plate so it didn’t go to waste.
Squeeze some fresh lime over each avocado half and season with kosher salt and pepper.
Stuff each avocado with the turkey taco meat, sour cream/ your favorite taco sauce or my high protein creamy taco sauce, cheese, cilantro, and any toppings of choice such as hot sauce and pickled onions or jalapenos.

High Protein Turkey Taco Stuffed Avocado is a healthy lunch or dinner recipe, part of my Blackstone griddle high protein meal prep series!
Ingredients
- cooking oil of choice
- 1/2 pound ground turkey (I cooked the whole pound and used the extra in taco salads)
- taco seasoning blend of choice
- 2 large avocados (ripe but still firm)
- 2 lime wedges
- kosher salt, pepper
- 1/4 cup sour cream or your favorite taco sauce (or my High Protein Creamy Taco Sauce, recipe in post above)
- 1/2 cup shredded cheese of choice
- 1/4 cup chopped, fresh cilantro
- Optional toppings: hot sauce, pickled onions or jalapenos
