
High Protein Turkey Taco Stuffed Avocado is a healthy lunch or dinner recipe, part of my Blackstone griddle high protein meal prep series!
Note: This is part of my Blackstone High Protein Meal Prep Series, so the turkey and sweet potatoes were already cooked when I assembled these stuffed avocados. Preheat a skillet or your Blackstone griddle to medium heat. Add cooking oil of choice, ground turkey, and taco seasoning. Cook the turkey 7 to 10 minutes, mixing and breaking it apart with your spatulas.
Cut each avocado in half, remove pit, scoop out some of the inside to hollow out a space for the taco filling (I added the avocado I removed to my plate so it didn't go to waste). Squeeze lime over each avocado half and season with kosher salt and pepper.
Stuff each avocado with the turkey taco meat, sour cream/ your favorite taco sauce or my high protein creamy taco sauce, cheese, cilantro, and any toppings of choice such as hot sauce and pickled onions or jalapenos.
