So the chicken was already prepped, cooked, ready to go and I premade the Cilantro Jalapeno Cottage Cheese Dressing as well.

How to make High Protein Chicken Taco Salads

I used my homemade Cilantro Jalapeno Cottage Cheese Dressing, but you could easily use a store bought protein dressing if desired.

And an extra boost of protein and crunch thanks to the Quest chips.

Put your chopped lettuce of choice in a large bowl, add cheese and the cooked taco chicken.

I also added an avocado and crushed up the Quest chips before adding them.

Then some kosher salt, pepper, taco seaosning, and the dressing.

Toss it all together and enjoy!

High Protein Chicken Taco Salads, a healthy salad recipe with an extra boost of protein thanks to the cottage cheese dressing and Quest chips!

Ingredients

  • 4 cups chopped lettuce of choice
  • 2 cups chopped or shredded, cooked chicken
  • 1 large avocado diced
  • 1/2 cup shredded cheese of choice
  • 1/2 cup drained, rinsed canned black beans (optional)
  • 2 individual bags Nacho Quest Protein Chips
  • 4 ounces protein dressing of choice (store bought or my Cilantro Jalapeno Cottage Cheese Dressing, recipe in post above)
  • kosher salt, pepper, taco seasoning blend, hot sauce (optional)

Instructions

  1. Put everything in a large bowl and use tongs to toss together, breaking up the chips a bit as you mix.

  2. Divide between two bowls and enjoy!
