Chimichurri Steak Breakfast Bowls
This recipe is actually a recreation of a First Watch restaurant menu item on my Blackstone griddle, but Chimichurri Steak Breakfast Bowls can also be made in a skillet.
I made a big batch of Cilantro Jalapeno Chimichurri, but you could also use store bought.

How to make Chimichurri Steak Breakfast Bowls
Preheat your Blackstone griddle or large skillet over medium heat.
Add cooking oil and some diced gold potatoes.
Season with kosher salt, pepper, and breakfast seasoning blend of choice.
Add some water and cover with a melting dome or skillet lid for 8 to 10 minutes.
Remove the dome or lid a few times to mix and add more water before covering again.

Set your melting dome or lid aside.
Add more cooking oil, some diced steak, sliced sweet mini peppers, plus more kosher salt, pepper, and breakfast seasoning.

Cook this for 4 to 5 more minutes, mixing a few times.

Fry up some eggs to top these beautiful bowls.

Divide the steak and potato mixture between 4 bowls and top each with a fried egg, feta cheese, and chimichurri.
I also added some cilantro lime taco sauce to mine.

Chimichurri Steak Breakfast Bowls are almost too pretty to eat!

Chimichurri Steak Breakfast Bowls
Chimichurri Steak Breakfast Bowls is a tasty recipe recreation of the First Watch steak and potato bowl on my Blackstone griddle!
Ingredients
- cooking oil of choice
- 3 to 4 gold potatoes diced
- kosher salt, pepper, breakfast seasoning blend (optional)
- 12 ounces steak of choice (I used sirloin) diced
- 8 sweet mini peppers sliced
- 4 eggs
- 6 ounces chimichurri (store bought or link to my homemade in post above)
- 4 ounces feta cheese
- Optional: garlic aioli or taco sauce (I used a cilantro lime taco sauce)
Instructions

Preheat your Blackstone griddle or large skillet over medium heat. Add cooking oil and the potatoes. Season with kosher salt, pepper, and breakfast seasoning (if using). Add some water and cover with a melting dome or skillet lid for 8 to 10 minutes. Remove the dome or lid a few times to mix and add more water before covering again.

Set dome or lid aside. Add more cooking oil, steak, peppers, kosher salt, pepper, and breakfast seasoning (if using). Cook 4 to 5 more minutes, mixing a few times.

Remove this from griddle or skillet and divide between 4 bowls. Fry the eggs how you prefer in the skillet or griddle, seasoning with kosher salt and pepper.

Top each breakfast bowl with a fried egg, chimichurri, feta cheese, and optional sauces such as garlic aioli or taco sauce.
