Chimichurri Steak Breakfast Bowls is a tasty recipe recreation of the First Watch steak and potato bowl on my Blackstone griddle!

Ingredients
  • cooking oil of choice
  • 3 to 4 gold potatoes diced
  • kosher salt, pepper, breakfast seasoning blend (optional)
  • 12 ounces steak of choice (I used sirloin) diced
  • 8 sweet mini peppers sliced
  • 4 eggs
  • 6 ounces chimichurri (store bought or link to my homemade in post above)
  • 4 ounces feta cheese
  • Optional: garlic aioli or taco sauce (I used a cilantro lime taco sauce)
Instructions
  1. Preheat your Blackstone griddle or large skillet over medium heat. Add cooking oil and the potatoes. Season with kosher salt, pepper, and breakfast seasoning (if using). Add some water and cover with a melting dome or skillet lid for 8 to 10 minutes. Remove the dome or lid a few times to mix and add more water before covering again.

  2. Set dome or lid aside. Add more cooking oil, steak, peppers, kosher salt, pepper, and breakfast seasoning (if using). Cook 4 to 5 more minutes, mixing a few times.

  3. Remove this from griddle or skillet and divide between 4 bowls. Fry the eggs how you prefer in the skillet or griddle, seasoning with kosher salt and pepper.

  4. Top each breakfast bowl with a fried egg, chimichurri, feta cheese, and optional sauces such as garlic aioli or taco sauce.
