Cheesy Sausage Breakfast Biscuits

This week I made my husband this quick and simple meal prep recipe for Cheesy Sausage Breakfast Biscuits.

I might like him a little, and some weeks I spoil him with a homemade breakfast to bring to work.

You can enjoy these right away warm from the oven, or pack them on the go to warm in the microwave before serving.

How to make Cheesy Sausage Breakfast Biscuits

First set a large skillet over medium heat.

Add some cooking oil, a diced onion and jalapeno, plus a little kosher salt, pepper, and seasoning blend of choice.

Cook the onions and peppers for just 3 minutes, then add in a pound of ground breakfast sausage.

Cook the sausage for 5 to 7 minutes in the skillet with the onions and jalapenos.

Then let it cool while you crack 8 eggs in a large bowl.

Season with kosher salt, pepper, and all purpose seasoning and beat with a fork.

Next add 2 cups of all purpose or bread flour and 2 teaspoons baking powder.

Two cups of shredded cheese joins the party and then add the cooled sausage mixture.

And simply mix until combined.

Spray a 12-count regular size muffin pan with non stick spray and use an ice cream scoop to distribute the batter.

Pop this into a 375-degree oven for 20 to 25 minutes.

Ingredients

  • 1 tablespoon cooking oil of choice
  • 1 small onion diced
  • 2 jalapeno peppers diced, most seeds removed
  • kosher salt, pepper, all-purpose seasoning blend of choice (optional)
  • 1 pound ground breakfast sausage
  • 8 eggs
  • 2 cups all-purpose or bread flour
  • 2 teaspoons baking powder
  • 2 cups shredded cheese of choice
  • non stick cooking spray

Instructions

  1. Set a large skillet over medium heat. Add the cooking oil, onions, jalapenos, kosher salt, pepper, and all-purpose seasoning (if using). Cook 3 minutes, stirring a few times.

  2. Add breakfast sausage to the skillet and cook 5 to 7 more minutes, breaking apart the sausage as it cooks. Remove from heat and let cool slightly.

  3. While sausage is cooling, crack 8 eggs into a large bowl. Add kosher salt, pepper, and all-purpose seasoning (if using) and beat with a fork.

  4. Add the flour, baking powder, cheese, and cooked sausage mixture to the bowl with the eggs. Mix until combined.

  5. Spray a 12-count regular size muffin tin with non stick cooking spray. Use an ice cream scoop to add the batter. Bake in a 375-degree oven for 20 to 25 minutes.

  6. Enjoy warm from the oven or store in a covered container in the fridge for up to 4 days. Microwave 1 minute before serving.
