Chicken Sausage Breakfast Quesadillas
This recipe for Chicken Sausage Breakfast Quesadillas on the Blackstone E-series Indoor Griddle made my life a little easier.
Meal prepping a quick breakfast on the go during the first week of back to school was a game changer.

How to make Chicken Sausage Breakfast Quesadillas
First slice a pound of already cooked chicken breakfast sausage links.
Then crack 8 eggs in a bowl with some heavy cream, kosher salt, pepper, and the Blackstone Lumberjack breakfast seasoning if you have it.
Beat the eggs with a fork.

Preheat your Blackstone griddle, or a skillet, to medium-low heat… or 400 degrees if using your indoor griddle.
And cook the chicken sausage with a little oil for a few minutes.

Use your spatulas to mix them around a few times.

Then pour the eggs right over top and scramble them until cooked to your liking.

Remove the eggs and let’s build some quesadillas!
Flour tortillas, cheese, plenty of eggs and sausage… and they can be made all at once on the griddle, or one at a time in a skillet.

I added some cilantro lime taco sauce, but that’s optional.
More cheese, and the top tortilla.
After a few minutes of flipping them and cooking, the cheese will be melted and the tortillas a gorgeous golden brown.

We stored Chicken Sausage Breakfast Quesadillas in the fridge and warmed throughout the week in the microwave 🙂

Chicken Sausage Breakfast Quesadillas
Chicken Sausage Breakfast Quesadillas can be made in a skillet or Blackstone griddle, easy meal prep breakfast recipe or perfect for camping!
Ingredients
- 1 pound breakfast chicken sausage links (mine were already cooked)
- 8 eggs
- 1/4 cup milk or heavy cream
- kosher salt, pepper, Blackstone Lumberjack Breakfast seasoning (optional)
- cooking oil of choice
- 16 soft taco size flour tortillas
- 2 to 3 cups shredded cheese of choice
- taco sauce of choice (optional)
Instructions

Slice the chicken sausage. Crack the eggs in a bowl, add milk or cream, kosher salt, pepper, and breakfast seasoning (if using). Beat with a fork.

Preheat your Blackstone griddle or a large skillet over medium-low heat (400 degrees for an indoor griddle). Add some cooking oil and the sliced sausages, cook 2 to 3 minutes mixing a few times. Add the eggs right over the sausage and cook 3 minutes, scrambling the eggs together with the sausage and remove once cooked how your prefer.

Add more cooking oil and half of the tortillas if using a griddle, add one at a time if using a skillet. Sprinkle cheese on each tortilla, add some of the sausage/egg mixture, more cheese, taco sauce if using, and top each with another tortilla. Cook 3 to 4 minutes, flipping a few times until tortillas are golden and cheese is melted. Repeat making 8 quesadillas total.
