Chicken Sausage Breakfast Quesadillas can be made in a skillet or Blackstone griddle, easy meal prep breakfast recipe or perfect for camping!

Ingredients
  • 1 pound breakfast chicken sausage links (mine were already cooked)
  • 8 eggs
  • 1/4 cup milk or heavy cream
  • kosher salt, pepper, Blackstone Lumberjack Breakfast seasoning (optional)
  • cooking oil of choice
  • 16 soft taco size flour tortillas
  • 2 to 3 cups shredded cheese of choice
  • taco sauce of choice (optional)
Instructions
  1. Slice the chicken sausage. Crack the eggs in a bowl, add milk or cream, kosher salt, pepper, and breakfast seasoning (if using). Beat with a fork.

  2. Preheat your Blackstone griddle or a large skillet over medium-low heat (400 degrees for an indoor griddle). Add some cooking oil and the sliced sausages, cook 2 to 3 minutes mixing a few times. Add the eggs right over the sausage and cook 3 minutes, scrambling the eggs together with the sausage and remove once cooked how your prefer.

  3. Add more cooking oil and half of the tortillas if using a griddle, add one at a time if using a skillet. Sprinkle cheese on each tortilla, add some of the sausage/egg mixture, more cheese, taco sauce if using, and top each with another tortilla. Cook 3 to 4 minutes, flipping a few times until tortillas are golden and cheese is melted. Repeat making 8 quesadillas total.
