Ingredients
  • 1 tablespoon cooking oil of choice
  • 1 small onion diced
  • 2 jalapeno peppers diced, most seeds removed
  • kosher salt, pepper, all-purpose seasoning blend of choice (optional)
  • 1 pound ground breakfast sausage
  • 8 eggs
  • 2 cups all-purpose or bread flour
  • 2 teaspoons baking powder
  • 2 cups shredded cheese of choice
  • non stick cooking spray
Instructions
  1. Set a large skillet over medium heat. Add the cooking oil, onions, jalapenos, kosher salt, pepper, and all-purpose seasoning (if using). Cook 3 minutes, stirring a few times.

  2. Add breakfast sausage to the skillet and cook 5 to 7 more minutes, breaking apart the sausage as it cooks. Remove from heat and let cool slightly.

  3. While sausage is cooling, crack 8 eggs into a large bowl. Add kosher salt, pepper, and all-purpose seasoning (if using) and beat with a fork.

  4. Add the flour, baking powder, cheese, and cooked sausage mixture to the bowl with the eggs. Mix until combined.

  5. Spray a 12-count regular size muffin tin with non stick cooking spray. Use an ice cream scoop to add the batter. Bake in a 375-degree oven for 20 to 25 minutes.

  6. Enjoy warm from the oven or store in a covered container in the fridge for up to 4 days. Microwave 1 minute before serving.
