Marry Me Chicken Orzo Soup

We’ve all heard of the viral recipe for Marry Me Chicken! Well this is a whole new way to enjoy similar flavors and ingredients all in one pot… Marry Me Chicken Orzo Soup!

And it truly is one of the BEST soup recipes I’ve ever made.

My husband even called it a SOUP-CESSS!! Too cute, right?!

How to make Marry Me Chicken Orzo Soup

First set a large soup pot over medium heat.

Then add some olive oil, a diced onion, kosher salt, pepper, and crushed red pepper flakes.

Cook for 4 to 5 minutes, then add a pound of diced chicken, fresh minced garlic, plus more kosher salt, pepper, and crushed red pepper flakes.

Cook for another 4 to 5 minutes, then pour in 6 cups of chicken broth.

Plus a tablespoon of dried Italian seasoning and a tablespoon of chicken base like Better Than Bouillon.

Bring the broth to a boil and add in 1/2 pound of orzo pasta.

Then reduce the heat to medium low and simmer for about 15 minutes, stirring a few times.

A cup of heavy cream joins the party next 🙂

And 8 ounces of chopped, fresh spinach and an 8 ounce jar of sliced sun dried tomatoes.

Drain the oil from the tomatoes, or save the oil to use in another dish.

Stir all of this yumminess together and simmer for another 8 minutes or so.

Finally, taste for seasoning and add more kosher salt, pepper, crushed red pepper flakes, and/or Italian seasoning if needed.

Ingredients

  • 2 tablespoons olive oil
  • 1 onion diced
  • kosher salt, pepper, crushed red pepper flakes
  • 6 to 7 cloves garlic minced
  • 1 pound boneless, skinless chicken breasts cut pretty small, bite size pieces
  • 6 cups chicken broth
  • 1 tablespoon Italian seasoning
  • 1 tablespoon chicken base (I used Better Than Bouillon)
  • 1/2 pound orzo
  • 1 cup heavy cream
  • 8 ounces fresh chopped spinach
  • 1 8 ounce jar sliced sun dried tomatoes drained from the oil
  • Optional: shredded parmesan cheese, basil

Instructions

  1. Set a large soup pot over medium heat. Add the olive oil, onion, kosher salt, pepper, and crushed red pepper flakes. Cook 4 to 5 minutes.

  2. Add the garlic, chicken, more kosher salt, pepper, and crushed red pepper flakes. Cook 4 to 5 minutes.

  3. Pour in the chicken broth and the Italian seasoning and chicken base. Bring this to a boil and add the orzo, then reduce the heat to medium low and simmer for 13 to 15 minutes.

  4. Add the heavy cream, spinach, and sun dried tomatoes. Raise the heat to bring to a boil, then reduce to medium low and simmer 7 to 9 more minutes. Taste for seasoning and add more kosher salt, pepper, crushed red pepper flakes, and/or Italian seasoning if needed.

  5. Serve the soup with parmesan cheese and basil over top if desired.
