Buffalo Chicken Burritos
Buffalo Chicken Burritos came to the recipe rescue and were most definitely way more delicious than my original plan đŸ™‚
True story…this was a last minute meal that I just kind of threw together.
My original plan was to grill some chicken breasts because we were blessed with some gorgeous spring weather.
Buuuuut, the grill was out of propane.
I made some Simple Shredded Chicken with the chicken breasts in the oven since the grill wasn’t a choice.
How to Make Buffalo Chicken Burritos
Once the chicken was cooled enough I shredded it.
I mixed together buffalo sauce with ranch dressing and tossed some of that mixture with the chicken and a cup of cheese.

Put 1/4 of the chicken mixture in the center of a burrito size soft tortilla, just like this.
Then fold the sides in.
Fold the front part of the tortilla over the filling.
And roll it over into a burrito.
Grease the bottom of a 9×13 casserole dish and place the burritos seam side down in the dish.
Then pour the remaining buffalo ranch mixture right over top.
And a little more cheesy goodness right over top.
You’ll bake this for 20 minutes at 400 degrees and that’s it!
Buffalo Chicken Burritos really are just that simple! And so yummy!

Buffalo Chicken Burritos
Buffalo Chicken Burritos are cheesy, a little spicy, and an absolutely delicious one pan meal with just a few simple ingredients!
Ingredients
- 1 cup buffalo wing sauce
- 1 cup ranch dressing
- 4 cups shredded, cooked chicken
- 2 cups shredded cheese of choice (I used Mexican blend)
- 1/2 Tbsp olive oil
- 4 burrito size tortillas
Instructions

In a bowl, whisk together the buffalo wing sauce and ranch dressing.

Add the shredded chicken, 1 cup of the cheese, and 1 cup of the buffalo ranch mixture to another bowl. Toss until evenly mixed.

Brush the bottom of a 9×13 casserole dish with the olive oil.

Lay a tortilla flat and add 1/4 of the chicken mixture to the center. Fold in the sides, fold the top part over the filling, and roll into a burrito (picture examples in post above). Place seam side down in the casserole dish. Repeat with remaining burritos.

Pour the remaining buffalo ranch mixture over top of the burritos and sprinkle the remaining cheese. Bake in a 400 degree oven for 20 minutes.
