
Air Fryer Eggplant Parmesan Fries
These Air Fryer Eggplant Parmesan Fries are a fun recipe spin on traditional eggplant parmesan.
Little hand held crispy fries dipped in your favorite marinara sauce make the perfect side dish or appetizer.
I would also add that these are a guilt free way to enjoy eggplant parmesan since they are air fried instead of deep fried.
They are also a sneaky way to get the kids to eat their veggies 😉
How to Make Air Fryer Eggplant Parmesan Fries
The eggplant I had was a small to medium size, so they all fit in one batch in my air fryer.
Slice them up in half inch fry size pieces.
Then add some panko bread crumbs, grated parmesan cheese, kosher salt, and pepper in one bowl.
And a beaten egg in another bowl.

Dip each eggplant fry into the egg, then into the panko mixture.
Press the crumbs slightly so they stick and place each one into the air fryer basket.
Spray some olive oil cooking spray over top and set the air fryer to 390 for 8 to 10 minutes.

Crispity, crunchity eggplant fries that are golden brown…YUM!

Serve the Air Fryer Eggplant Parmesan Fries with your favorite marinara sauce for dipping!
These are best if eaten right away 🙂
But I don’t think you’ll have a problem devouring them immediately.

Air Fryer Eggplant Parmesan Fries
Air Fryer Eggplant Parmesan Fries have a crispy, crunchy, cheesy breading thanks to the air fryer and can be dipped in marinara sauce!
Ingredients
- 1 eggplant (small to medium in size)
- 1 egg
- 1/2 cup panko breadcrumbs
- 1/2 cup grated parmesan cheese
- kosher salt, pepper
- olive oil cooking spray (I used Pam)
- marinara sauce for dipping
Instructions

Cut the eggplant into fry size pieces, approx 1/2 inch thickness.

Beat the egg in one bowl. Combine the panko, parmesan cheese, kosher salt, and pepper in a separate bowl and stir until evenly mixed.

Dip each eggplant fry into the egg and then into the panko mixture. Press the panko slightly into the eggplant and place in the air fryer. Repeat with remaining eggplant fries.

Spray lightly with the olive oil cooking spray. Set the air fryer to 390 degrees for 8 to 10 minutes.

Serve with marinara sauce for dipping.
