Buffalo Chicken and Waffles
I had one of my weird foodie daydreams and came up with this recipe for Buffalo Chicken and Waffles.
My original plan was to stay in on Valentine’s Day and make Reverse Seared Ribeyes with Garlic Herb Butter for my sweet husband.
But all that changed when I thought of these!
I have made regular chicken and waffles quite a few times, and I’m pretty sure that’s one reason why my husband proposed to me in the first place.
So I stepped up my game to include buffalo sauce AND blue cheese stuffed waffles 🙂
Here’s How To Make Buffalo Chicken and Waffles
Two pounds of chicken breasts cut into strips go into a gallon size bag.
Then add buttermilk, buffalo sauce, and garlic.
Massage the bag and let it marinate in the fridge overnight, or at least an hour.
I fry my chicken in smaller batches in a saucepan on the stove.
Frying in smaller batches makes the chicken crispier since the oil temp doesn’t drop way down like it would if you fried them all at once.
Dredge them in flour seasoned with Lawry’s season salt and fry them three at a time.
About 8 to 9 minutes and they will be fried to crispy perfection.
Remove from the oil and place on paper towels to drain the excess oil.
Once the chicken is fried, place it in a 250 degree oven to keep it warm while you make the waffles.
A fun fact about me is I love to cook, but hate to bake (Ok, sorry it wasn’t really that “fun” of a fact 😉 ).
Anyhoo…that’s why I am using a box of waffle mix rather than making my own.
Prepare 3 cups of waffle batter according to the package directions and stir in 4 ounces of blue cheese crumbles.
And make the waffles in your waffle maker.
Now that both the chicken and waffles are done, it’s time to assemble the Buffalo Chicken and Waffles!
Dip the chicken into more buffalo sauce and place on top of a blue cheese stuffed waffle.
Then top with more blue cheese crumbles and green onions.
A must have when serving this is pure maple syrup, not the processed stuff, in my opinion.
This was certainly not a quiet, romantic Valentine dinner for two, as the kids got to enjoy these with us…
and it was perfectly perfect in every way.

Buffalo Chicken and Waffles
Buffalo Chicken and Waffles is a fun spin on chicken and waffles, crispy fried buttermilk chicken in buffalo sauce over a blue cheese stuffed waffle!
Ingredients
- 2 pounds boneless, skinless chicken breasts
- 1 cup buttermilk
- 1 1/2 cups buffalo wing sauce
- 4 cloves garlic minced
- 1 cup flour
- 1 Tbsp Lawry's season salt
- vegetable oil (enough to fill a small pan 2 inches deep)
- 3 cups prepared waffle batter (I followed the directions on the waffle mix)
- 4 oz blue cheese crumbles
- 1 cup pure maple syrup
- Optional: more blue cheese crumbles and green onions to sprinkle over top
Instructions

Cut the chicken into strips (2 to 3 strips per chicken breast) and place in a gallon size plastic bag. Add the buttermilk, 1/2 cup of the buffalo sauce, and garlic Massage the bag until evenly mixed. Place in the fridge several hours or overnight.

Mix the flour and season salt together in a bowl.

Pour the vegetable oil in a small pan approx. two inches deep. Place over medium heat for 5 minutes, check with an instant read thermometer, it's ready when the temp is 350 degrees.

Remove three chicken tenders from the buttermilk, coat each in the seasoned flour, and fry in the oil 8-9 minutes. Remove chicken from the oil and place on paper towels to drain excess oil. Repeat with remaining chicken tenders.
Note: Putting the chicken in a 250 degree oven will keep them warm while you make the waffles.

Mix the waffle batter according to directions on a box of waffle mix for 3 cups of batter. Mix in the blue cheese.

Make the waffles according to the directions on your waffle maker. This should make 6 to 8 waffles.

Toss the fried chicken tenders in the remaining buffalo sauce. Top each waffle with a fried chicken tender. Seve with maple syrup and also extra blue cheese crumbles and green onions if desired.
