Jalapeno Popper Chicken Salad
I’m pretty sure I could eat jalapeno popper anything! That’s why I just HAD to try making this recipe for Jalapeno Popper Chicken Salad of course.
Shredded chicken, bacon, cheese, and jalapenos with a cream cheese mixture…YUM!
You could enjoy this on crackers, as a wrap or sandwich, or as a lettuce wrap!
Any way you choose, it’s a must try for sure 🙂
It starts with some cooked, shredded chicken.
A store bought rotisserie chicken would work just fine.

How to make Jalapeno Popper Chicken Salad
Four cups of shredded chicken go into a bowl along with bacon, cheese, jalapenos, and green onions.
I made the bacon in my air fryer and crumbled it once it was cool.
While the bacon cooked I diced two jalapenos (minus the seeds) and some green onions.
Next, mix some cream cheese (at room temperature) and some mayo together.
I had the best luck with a hand mixer for about one minute.
Add this to the bowl with the chicken and other yumminess.
Then sprinkle with kosher salt, pepper, and mix it all together.
Taste for seasoning and it’s ready to serve!

This Jalapeno Popper Chicken Salad can be served as lettuce wraps if you’re going for a low carb option.

Or served as a wrap with some crisp lettuce to add a little freshness.

Jalapeno Popper Chicken Salad
A yummy chicken salad with jalapenos, bacon , and cheese
Ingredients
- 10 slices bacon
- 2 jalapenos
- 5 green onions
- 4 cups cooked, shredded chicken
- 1 cup shredded cheese of choice
- 4 oz cream cheese at room temp
- 1/2 cup mayo
- kosher salt, pepper
Instructions

Cook the bacon in the air fryer for 10 minutes. Once cooled, crumble the bacon.
If you don't have an air fryer, use kitchen scissors to cut the bacon into bite size pieces directly into a skillet over medium heat. Cook 7 to 9 minutes, stirring occasionally. Remove from skillet and place on paper towels to drain excess grease.

Dice the jalapenos, remove seeds and white parts. Slice the green onions.

Put the cream cheese and mayo in a separate bowl, mix with a hand mixer for 1 minute.

Place the cooked, shredded chicken into a large bowl and add the cooked bacon, jalapenos, green onions, and cheese. Add the cream cheese and mayo mixture, kosher salt, and pepper and stir until evenly mixed.

Serve the chicken salad on crackers, as a sandwich or wrap, or as a lettuce wrap.
