
Smoked Bacon Wrapped Brussels Sprouts

I made some Air Fryer Brussels Sprouts a few days ago and I had some leftover from the big bag. I do not waste food if I can help it, so I thought to make a little snack for my family. This is what I came up with. Most kids get chips, or maybe an apple as a snack…my kids get Smoked Bacon Wrapped Brussels Sprouts 😉
And oddly enough they all love brussels sprouts!

How to make Smoked Bacon Wrapped Brussel Sprouts
I set up my little bacon wrapping station here on a cutting board.
Some bacon cut in half, brussels sprouts, and BBQ seasoning is what we have here, along with some toothpicks that I soaked in water.
My mother in law gave us this Pit Boss sweet heat rub, as it was too spicy for her. It’s one of my favorite BBQ seasonings for sure so that’s what I used.

Season one side of the bacon with your favorite BBQ seasoning, wrap each half slice around the brussels sprouts, and secure with a toothpick.
My toothpicks did go through the brussels sprouts slightly.

I placed these on the smoker set to 250 degrees for an hour and a half. We have a traeger smoker, it’s SO simple and easy to use.

I did not flip them or move them at all. Seriously just enjoyed the scent of BBQ and bacon as they smoked 🙂

As the Smoked Bacon Wrapped Brussels Sprouts cooked, I made a dipping sauce.
I mixed together some mayo, dijon mustard, and garlic paste.

Smoked Bacon Wrapped Brussels Sprouts
Bacon wrapped brussels sprouts smoked to yummy perfection
Ingredients
- 6 slices bacon
- BBQ seasoning
- 12 brussels sprouts
- 12 toothpicks that have been soaked in water for several hours
- 1/4 cup mayo
- 2 Tbsps dijon mustard
- 1/2 Tbsp garlic paste or minced garlic
Instructions

Cut the slices of bacon in half. Season one side of the bacon with BBQ seasoning.

Wrap each half slice of bacon around the brussels sprouts, seasoned side facing out, and secure the bacon with a toothpick.

Place them on a smoker set to 250 degrees for one and a half hours.

In a bowl add the mayo, dijon mustard, and garlic. Stir until evenly mixed. Serve with the brussels sprouts as a dipping sauce.
