Harvest Apple Salad with Maple Vinaigrette
Since Honeycrisp apples are in season now, I created a healthy fall recipe for Harvest Apple Salad with Maple Vinaigrette.
A great vegetarian or Meatless Monday recipe too đŸ™‚
I love adding fruit to salads!
Especially when combining it with a salty cheese like feta, goat, or blue cheese.
Not only is this salad delicious, it only took me 10 minutes to throw it together đŸ™‚
Gotta love a simple, quick, no-cook meal, right?!
How to Make Harvest Apple Salad with Maple Vinaigrette
The maple vinaigrette is easy to make.
Simply add olive oil, balsamic vinegar, pure maple syrup, and dijon mustard to a mason jar and shake.
The mustard will actually emulsify the dressing, making the oil and vinegar into one liquid that won’t separate.

Divide up the lettuce, goat cheese, cranberries, and candied walnuts onto plates or containers.
I used a baby spring mix of lettuce, but spinach would be a great and healthy choice as well.
Cut the apple right before serving to prevent browning and serve with the maple vinaigrette dressing.
If packing this salad as leftovers I would recommend packing an apple separately and cutting it right before eating it.
And you make this more of a filling meal by adding some cooked chicken or steak.
The combination of flavors in this salad will have you forgetting how healthy it is.

Harvest Apple Salad with Maple Vinaigrette
A gorgeous, healthy, and delicious salad with a yummy homemade dressing!
Ingredients
- 1/2 cup olive oil
- 1/4 cup balsamic vinegar
- 1/4 cup 100%pure maple syrup
- 2 tsps dijon mustard
- 8 oz baby spring lettuce mix
- 4 oz crumbled goat cheese
- 6 oz dried cranberries
- 6 oz candied walnuts
- 2 honeycrisp apples diced
Instructions

In a mason jar, combine olive oil, balsamic vinegar, maple syrup, and dijon mustard. Put the lid on and shake for 30 seconds.

Divide the lettuce between 4 plates or containers, evenly divide the goat cheese, cranberries, walnuts, and diced apples.

Serve with the maple vinaigrette dressing.
