Sausage Apple Cranberry Couscous
Sausage Apple Cranberry Couscous is a great fall dinner recipe all made in one pan or skillet, a complete meal ready in minutes!
We used the smaller couscous, but you can certainly use the larger pearl couscous if desired.

How to make Sausage Apple Cranberry Couscous
First, set a large skillet over medium heat and add a pound of pork sausage.
Cook the sausage for 5 minutes, breaking it apart as it cooks.
Use a paper towel to soak up most of the grease (I held my paper towel with my tongs).

Add a diced Honeycrisp apple to the skillet and cook it for 5 to 6 minutes with the sausage.

Add the couscous mix, seasoning packet from the box, 1 1/4 cup of water or chicken broth, dried cranberries, fresh thyme, just a little kosher salt, pepper, crushed red pepper flakes, and a pinch of cinnamon.
The cinnamon is optional, but added to the fall flavor profile and the crushed red pepper flakes gave this dish a nice sweet and spicy vibe.
Once this comes to a boil, stir and cover the skillet with a lid and remove from heat.
And just let it sit for 5 minutes with the lid on.

Serve with more fresh thyme and goat cheese or feta cheese, toasted pumpkin seeds or toasted pine nuts if desired.

Sausage Apple Cranberry Couscous is such a beautiful fall dinner recipe 🙂
