Ingredients
  • 1 pound ground pork sausage
  • 1 large Honeycrisp apple diced, skin on
  • 1 (5.8-ounce) box Couscous (I used Near East brand, Roasted Garlic and Olive Oil flavor)
  • 1 1/4 cup water or chicken broth
  • 1/3 cup dried cranberries
  • 2 tablespoons fresh thyme leaves
  • kosher salt, pepper, crushed red pepper flakes, ground cinnamon (optional)
  • Optional toppings: more fresh thyme, goat cheese or feta cheese crumbles, toasted pumpkin seeds or toasted pine nuts
Instructions
  1. Set a large skillet over medium heat and add the sausage. Cook 5 minutes, breaking it apart as it cooks. Use a paper towel to soak up most of the grease (I held my paper towel with my tongs).

  2. Add the diced apple to the skillet and cook 5 to 6 minutes with the sausage.

  3. Add the couscous, seasoning packet from the box, water or chicken broth, dried cranberries, thyme, just a little kosher salt, pepper, crushed red pepper flakes, and a pinch of cinnamon if using. Once this comes to a boil, stir and cover the skillet with a lid and remove from heat. Let sit 5 minutes with the lid on.

  4. Serve with more fresh thyme and goat cheese or feta cheese, pumpkin seeds or pine nuts if desired.
