Shrimp Po Boys with Cherry Pepper Aioli
This recipe for Shrimp Po Boys with Cherry Pepper Aioli is soooo easy thanks to using frozen popcorn shrimp!
You could certainly bread and fry your own, but I needed a simple weeknight meal.

How to make Shrimp Po Boys with Cherry Pepper Aioli
While the shrimp were cooking in the air fryer (or in the oven according to the package directions) I made a cherry pepper sauce in my food processor.
Cottage cheese or mayo, garlic, a few cherry peppers plus some of the brine from the jar, lemon juice, kosher salt, and pepper.
Just blend until smooth.

The popcorn shrimp were golden brown and crisp, so it was time to assemble the sandwiches!

I had mini sub buns that I toasted and then added some of the cherry pepper aioli to the bottom bun.
Then piled on the shrimp.

More of the cherry pepper aioli, of course.
And I only added lettuce to mine, but some sliced cherry peppers would have been awesome.

Shrimp Po Boys with Cherry Pepper Aioli sure look like a restaurant quality sandwich to me, no one would guess how easy they were to make!
Serve these with plenty of napkins, they are messy in the best way.
And if you have leftover sauce, store in the fridge to use on more sandwiches or as a dip for pita chips.

Shrimp Po Boys with Cherry Pepper Aioli
Shrimp Po Boys with Cherry Pepper Aioli is an easy recipe to make shrimp po boys at home with a homemade cherry pepper sauce and crispy shrimp!
Ingredients
- 3/4 cup mayo (or cottage cheese for a healthier option)
- 3 to 4 cherry peppers (plus 2 to 3 teaspoons of the brine from the jar)
- 2 teaspoons lemon juice
- 3 cloves garlic
- kosher salt, pepper
- 1 (14-ounce) package frozen popcorn shrimp
- 4 sub buns (I used mini sub buns)
- 1 cup shredded lettuce
Instructions

Put the mayo (or cottage cheese), cherry peppers plus brine, lemon juice, garlic, kosher salt, and pepper in a food processor or blender. Blend 1 minute.

Cook the shrimp according to package directions in either the air fryer or oven.

Toast sub buns if desired and assemble the sandwiches with some of the cherry pepper aioli on the bottom bun, shrimp, more cherry pepper aioli, lettuce, and top sub bun.
Note: You mave some aioli leftover, store covered in the fridge for up to a week to use on more sandwiches or as a veggie or chip dip.
