Ingredients
  • 3/4 cup mayo (or cottage cheese for a healthier option)
  • 3 to 4 cherry peppers (plus 2 to 3 teaspoons of the brine from the jar)
  • 2 teaspoons lemon juice
  • 3 cloves garlic
  • kosher salt, pepper
  • 1 (14-ounce) package frozen popcorn shrimp
  • 4 sub buns (I used mini sub buns)
  • 1 cup shredded lettuce
Instructions
  1. Put the mayo (or cottage cheese), cherry peppers plus brine, lemon juice, garlic, kosher salt, and pepper in a food processor or blender. Blend 1 minute.

  2. Cook the shrimp according to package directions in either the air fryer or oven.

  3. Toast sub buns if desired and assemble the sandwiches with some of the cherry pepper aioli on the bottom bun, shrimp, more cherry pepper aioli, lettuce, and top sub bun.

Note: You mave some aioli leftover, store covered in the fridge for up to a week to use on more sandwiches or as a veggie or chip dip.
